Lunacy takes over the the lunatic completely!

Well hello there all my lunatic fans. I am still alive and kicking here. Or sort of anyway. Alive and overloaded is more like it. Life just does not slow down here at the Beaulieu household. It's always spinning wildly out of control. No matter how hard we try to be "normal"  it just does not work. We've been over run with issues this week. You know, just normal stuff like replacing your tires only to find out the bill will be double as you put it off too long so now you're gonna pay for it … [Read more...]

Pizza a la Kim again, Ice Cream a la Paula Dean

Simple night tonight. Had tons of stuff to do today so had to keep things semi simple. Whipped up some pizza dough in the bread makers this morning. Then tackled an ice cream dessert I'd been wanting to try. Got crazy busy so had a late pizza dinner. The recipe for the pizza dough and pizza are already on the blog but I'll pop a few pics on for fun. Then underneath the pizza pics you'll find the ice cream recipe. Hope you love, love, love it as much as I did. The Parker Special is a pizza I … [Read more...]

Giada night at the Bee Bunch’s Place

So we needed a nice, healthy, lighter meal. I had watched Giada at Home a few days before and had seen some nice recipes I wanted to test out. So it was just myself and hubby last night. Seemed like a good night for healthy fare.It said these were quick and I must admit I had it all done in under 30 minutes. Somewhat impressive considering how gorgeous the meal was. A few things I noticed and would tweak next time I make these though. First off this girl uses too much lemon. I like lemon but … [Read more...]

I did not cook last night as we had leftover pasta from the night before. No way that yummy goodness was going to waste. I am completely in love with the bolognese sauce we had for dinner. I'm hoping sometime in the next month or so that I can invest in a pasta machine. Would be so lovely to make my own fresh pasta. This … [Read more...]

Bolognese and Garlic Knots – this is the best meal we’ve had all year!

Okay so I tried a new recipe. I found a bolognese recipe in my "williams sonoma pasta cookbook" that looked really yummy. Have been wanting to try it for quite a while. This one is a winner. It's really time consuming but so worth it. This one will definitely get made once a month or so. I may tweak a few things now that I've tried the original. Adding shallots would be a must for me. Some garlic. I already added sugar to mine. The knots I saw on a show called "cooking for real". They looked … [Read more...]

Kim’s Pizza

There's 2 dough recipes I used this time. I did one batch in the bread maker and one by hand. So I'll include both. Just to show you don't need a bread machine to make this stuff. Perfect Parmesan Pizza Dough (recipe from Kraft kitchens): 5 cups of flour, divided 1 cup Parmesan cheese 1 tsp fast-rise instant yeast 1/2 teaspoon salt 2 cups cold water 1/4 cup olive oil Directions: Mix 4 cups of flour, cheese, yeast and salt in a bowl. Croissants (bread maker)

My first time making these was a challenge to say the least. They are a tad complicated. It's very important to follow all the steps and read through the directions properly. I learned this as I did not read through them very well. Needless to say we had croissants the next day. I learned that you need to take your time with these. I also learned I used too much flour to prevent sticking. Quite possibly a bit of over-rolling as well. I will make these again as I like to perfect things. … [Read more...]

Easy there pot roast, simmer down carrots, hold your lumps potatoes and don’t get cross buns!

Geez what an absence, sorry folks. Some days I'm online a lot, other times I go for days without posting. If I only had my own computer this would be so much easier to keep up with. For now it's a shared pc I can never get on since apparently school work comes first. Pfft! So nothing fancy to post. But will give some tips for pot roast dinner. And a dessert gone awry but turned out alright. One never knows what will happen til the fat lady......eats. Okay whatever, lame joke. One of those … [Read more...]

Momzie’s Peanut Butter Cookies

Mom's Peanut Butter Cookies by Cravings of a Lunatic

Hello Bloggers. I made some cookies yesterday. This is something my Mom used to make a lot when we were kids. There are so many memories tied to these cookies. They are simple, classic and a family favourite around here. I have no idea where my Mom got the recipe. I just know it's been around since I was a little kid. My Mom was not the best cook in the world. But there were a few things she excelled at in the kitchen. Peanut butter cookies is one of those things. … [Read more...]

Momzie’s Meatballs

Hey folks. I'm back with recipes. Hard to get on here some days. We share one pc for 3 people right now. The other 2 are in school so Mom gets the short end of the stick on the computer use. So if I'm not posting much it's probably because someone has a test or project due. Or mini-me is watching tv online but that's a secret. B-Dude has his own netbook which I occasionally steal when he's in bed. Quite frankly I need my own computer. But then I also need to win a million dollars so there you … [Read more...]

I cooked, I baked, I need some sleep

Hey bloggers. Did a little cooking today amidst all the kitten fun. He seems to be adjusting as much as can be expected. When I can tear myself away from him I actually get things done. But with that cute little face who can help wanting to play with him all day. We left him alone for the first time today to go to the barn. Put him in the bedroom so he can jungle gym his way to sleepy time. He seemed perfectly fine when we returned. Hopefully another week or two and he can be left out with the … [Read more...]

This is dedicated to my mom. Best mom ever. Miss ya!

Just a brief note. This was written march 5th but will post the 6th. Just getting to send it out now.So today marked the 26th year since my Mom passed. Rough day as it is every year. I'm not sure why people tell others it gets easier with time. I tend to disagree. I don't think it gets easier, we just learn to cope better. To mask our pain and move through it with less physical signs to others. But it's always there, present in everything in we do. It shapes us to be who we are, some grow … [Read more...]

Kim’s Essex County Famous Lasagna

Kim's Essex County Famous Lasagna

The secret is out!   Okay I hesitated to put this out there.   Then I wondered if I should hold back an ingredient from you. But then I remembered that Everybody Loves Raymond episode where his mom gives Debra the spice bottle and Deb's recipe never turns out, and they find out she's put a label over the real label and used bad spices to purposely mess up Debra's food. And well I just can't do that to you guys.   So here it is in all it's glory, who knows, you may hate … [Read more...]

Recipes to follow after some general rantings!

So you all know me. And my family. And the fact that my son is in a writing contest atm. So I just want to sound off for a moment about something. Then I promise food will follow. Bitch first, eat later is my motto. Or bitch while eating! Or bitch while cooking! Or bitch while eating and cooking! You get the picture. LOL! So a friend thought there were shenanigans the first night of this round. I thought so too but who wants to blow the whistle that early. I figured Bray would catch up. Yet … [Read more...]
