Momzie’s Meatballs

Hey folks. I’m back with recipes. Hard to get on here some days. We share one pc for 3 people right now. The other 2 are in school so Mom gets the short end of the stick on the computer use. So if I’m not posting much it’s probably because someone has a test or project due. Or mini-me is watching tv online but that’s a secret. B-Dude has his own netbook which I occasionally steal when he’s in bed. Quite frankly I need my own computer. But then I also need to win a million dollars so there you go.

So I’m posting 2 recipes from the other day. The first is one of my Mom’s recipes. I am going to modify it so I am not giving out her exact recipe. There are a couple of hers we’d like to keep in the family. But I make this a bit different than hers so I’m posting my version of her recipe.

Momzie’s Modified Meatballs:

1 lb ground beef
1/2 cup rolled oats
1 egg, slightly beaten
1/2 cup milk
dash pepper
dash Himalayan salt (or any kind)
dash garlic powder
dash chili powder
1 teaspoon Worcestershire sauce

2 tablespoons flour
1 teaspoon paprika
1/2 teaspoon salt

2 tablespoons shortening ( I use grape seed oil instead, if you don’t have it olive oil is good too)

1/2 cup chopped onion ( I use shallots instead as I like the taste better)
1/2 cup bottled barbecue sauce
1/2 cup water
( I like to add about 1/4 cup Italian dressing, 1 tablespoon of sugar, and 1/4 ketchup as well now, optional)

Combine meat with oats, egg, milk, spices, and Worcestershire sauce. Let stand about 15 minutes in fridge. Shape into balls (full or mini).

Combine flour, paprika and salt in a small bowl or plastic baggie. Coat each meatball well with the dry mixture.

Put shortening or oil in frying pan. Cooking on medium heat. Place meatballs in pan and fry until lightly browned. Then pick them out and place in a greased casserole dish. Leave some oil in pan and saute the onion or shallot. Then add the barbecue sauce mixture to frying pan and bring to a boil. Pour over meatballs in casserole. Cover and bake at 350 degrees for 40-60 minutes depending on size of meatballs. I like to uncover them for the last 10 minutes to brown them up again. Serve.

The next recipe is inspired by an article I was reading years ago while waiting at the doctor’s office. It was an interview with a chef who cooked for Steven Tyler while he was on the road if I remember correctly. So I’ve dubbed them Aerosmith potatoes and hopefully they don’t sue me for using the name. She was saying he was a bit hard to cook for and had a bit of a sweet tooth. So she came up with a potato recipe he loved. I of course mildly tweaked it and have been using it for years. These are so good and the picture will not do them justice but you have got to try these. The mix of sweet with salty is amazing. I get lots of requests for these when people come for dinner. You can even do them on the barbecue in the summer in a pan or in tinfoil. So easy and so yummy.

Kim’s Aerosmith Potatoes:

5 or 6 potatoes, russet is best with these but use anything you have, even red is good.
2 to 3 tablespoons brown sugar
2 to3 heaping tablespoons of butter or olive oil (you can use anything honestly- margarine or any oil or broth)
1 to 2 shallots,diced (depending on your taste you can increase or decrease how many, I like lots)
dash of Himalayan salt

Cut potatoes into pieces. Size is personal. Sometimes I do them like home fries and sometimes I like big chunky pieces. Put into a greased or parchment lined casserole. Put in butter or oil, then sprinkle with salt. Toss shallots in. Cook at 375 degrees for about 50 minutes. Now add brown sugar and mix into the potatoes evenly. Place back into oven but turn up to about 425 degrees. Cook for 10 -20 more minutes until the sugar starts to caramelize on potatoes. Make sure you turn or stir these every 15 minutes or so throughout the entire cooking process or they might stick.Remove and serve.

This is my favorite way to do potatoes. I like the sweetness of them. They really are super easy to do. I usually sprinkle a touch of salt on them as I like the combination of salt with the sugar. But that’s a personal taste thing. You have to try these and let me know what you think of them.

    The potatoes are the bomb. I LOVE THEM! The meatballs are good, just be picky with your sauce. I did them with yucky sauce once…ick! Lol
