These pies were so yummy! This is the first time I've used phyllo dough. Had no idea what I was getting in to. Not an easy thing to work with. There is definitely a learning curve with these. My first mistake was prepping all the other ingredients before realizing the dough had to be out of the freezer for 5 hours. I was going to wait it out but a friend suggested popping them in the microwave. I figured I had nothing to lose so I did. It worked okay. Would only suggest about 30 seconds so it … [Read more...]
Easy Onion Rings and Sauteed Sausages
Hi folks. I'm back with a few easy recipes. One is a "Kiana favourite", my daughter loves these sausages. I buy the mild Italian sausage at Costco, they are really good. The brand I buy is "deli cart jumbo sausage" and they are a precooked smoked pork sausage. Sometimes I like to saute them and sometimes I do them on the bar-b-q. Best ones I've come across.I also did an old favourite that I do not think I've made for about 15 years. Thought I'd see if I can still do it. Super easy to do, … [Read more...]
Kim`s Stuffing (cheater version)
Okay so I get asked to make stuffing often when we have company and family gatherings. It is one of the most requested dishes along with my lasagna. So I thought I would share how I do it. The cheater version is so simple and anyone can do it to be honest. It is not a difficult recipe at all. It can also be adjusted to whether you like your stuffing light and fluffy or moist and more dense. I had a habit of doing moist and dense as that is how my Dad liked it. He did not like a dry stuffing. I … [Read more...]

Quick Update from the Lunatic
Hi folks. Sorry for the extended disappearance. Been some personal stuff going on in the Beaulieu household. So although I have been cooking, I have not been taking pictures or documenting things. Hopefully I shall return to normal tomorrow. We did do a huge meal tonight for Easter. We had company though so did not want to stop the meal to take pics. Here`s a list of what we had for Easter din-din: spiral glazed ham(bought at Honey Bee Ham Co), roast chicken, roast potatoes, mashed potatoes, … [Read more...]
Barbecue Ribs and Linguine Aglio Olio
Hello fellow foodies. Been a few days since I posted. So I thought tonight I would cook an old favourite and a new side dish. Was fun to try something new. I always enjoy seeing how things turn out. The goal is always to try to get the dish to look like it does in the cookbook/website/blog you found it on. It's amazing how many times it does not. On the occasional good day it turns out close to what it's suppose to look like. Today was a good day. Looked like it was suppose to and tasted … [Read more...]
Zitilicious
Okay so I have never officially had "ziti" until this evening. I always hear people talk about it. Never really knew much about it though. What I've discovered is I think us folks in boonie land call it penne. When you go to baby showers and weddings here a lot of the catering places offer a dish called penne. Penne is simply the poor man's (or woman's) ziti if I am guessing correctly. Penne is made with little or no meat and little or no cheese. The ziti recipes I found had cheese and most had … [Read more...]
