Peach Phyllo Pies

These pies were so yummy! This is the first time I've used phyllo dough. Had no idea what I was getting in to. Not an easy thing to work with. There is definitely a learning curve with these. My first mistake was prepping all the other ingredients before realizing the dough had to be out of the freezer for 5 hours. I was going to wait it out but a friend suggested popping them in the microwave. I figured I had nothing to lose so I did. It worked okay. Would only suggest about 30 seconds so it … [Read more...]

Easy Onion Rings and Sauteed Sausages

Hi folks. I'm back with a few easy recipes. One is a "Mini-me favourite", my daughter loves these sausages. I buy the mild Italian sausage at Costco, they are really good. The brand I buy is "deli cart jumbo sausage" and they are a precooked smoked pork sausage. Sometimes I like to saute them and sometimes I do them on the bar-b-q. Best ones I've come across. I also did an old favourite that I do not think I've made for about 15 years. Thought I'd see if I can still do it. Super easy to do, … [Read more...]

Kim`s Stuffing (cheater version)

Okay so I get asked to make stuffing often when we have company and family gatherings. It is one of the most requested dishes along with my lasagna. So I thought I would share how I do it. The cheater version is so simple and anyone can do it to be honest. It is not a difficult recipe at all. It can also be adjusted to whether you like your stuffing light and fluffy or moist and more dense. I had a habit of doing moist and dense as that is how my Dad liked it. He did not like a dry stuffing. I … [Read more...]

Apple Pie

Apple Pie (10 inch pie): 1 cup sugar 1/2 cup light brown sugar 1/3 cup flour 1 1/2 teaspoon nutmeg (this can be adjusted down to taste) 2 teaspoons cinnamon (this can be adjusted down to taste) Pinch of salt 4 tablespoons butter 8ish cups apples, about 7-8 medium sized (I find using more than one kind of apple makes a nicer pie. Sometimes I even use a granny smith in with it for some kick. Generally I like macs, empires or cortland(if available). Directions: Mix both sugars, … [Read more...]

Quick Update from the Lunatic

Hi folks. Sorry for the extended disappearance. Been some personal stuff going on in the Beaulieu household. So although I have been cooking, I have not been taking pictures or documenting things. Hopefully I shall return to normal tomorrow. We did do a huge meal tonight for Easter. We had company though so did not want to stop the meal to take pics. Here's a list of what we had for Easter din-din: spiral glazed ham(bought at Honey Bee Ham Co), roast chicken, roast potatoes, mashed potatoes, … [Read more...]

Barbecue Ribs and Linguine Aglio Olio

Hello fellow foodies. Been a few days since I posted. So I thought tonight I would cook an old favourite and a new side dish. Was fun to try something new. I always enjoy seeing how things turn out. The goal is always to try to get the dish to look like it does in the cookbook/website/blog you found it on. It's amazing how many times it does not. On the occasional good day it turns out close to what it's suppose to look like. Today was a good day. Looked like it was suppose to and tasted … [Read more...]

Okay so I have never officially had "ziti" until this evening. I always hear people talk about it. Never really knew much about it though. What I've discovered is I think us folks in boonie land call it penne. When you go to baby showers and weddings here a lot of the catering places offer a dish called penne. Penne is simply the poor man's (or woman's) ziti if I am guessing correctly. Penne is made with little or no meat and little or no cheese. The ziti recipes I found had cheese and most had … [Read more...]

Baguette Pizza

After a long absence I finally cook. Well if you can call this recipe cooking. It is super easy and one of our fave meals. It's nice to make when you're in a hurry but don't want to order out. The nice thing about it is you can do sections so everyone can get different toppings. If all 4 of us are home I usually use 2 baguettes. If it's only some of us then I just do 1 baguette. I have to say I was unhappy with the cheese on this one. Used a different brand and did not like the way it melted. I … [Read more...]

Quickie update, lunatic not lost!

Hey folks. I am still alive and kicking. Been a crazy week with lots going on. I'll be posting some recipes later today. I really haven't done anything fabulous cooking wise this week. We ordered pizza, made tacos, ate leftovers. The bottom line is I had absolutely nothing worthy to post. Been dealing with life issues and a court case I can't talk about quite yet. Been a stressful week, that I can tell you. So check back tonight as I will post a dinner recipe and possibly some baking ones as … [Read more...]

A Word to the Wise and Chicken Pot Pies

Well I am here to warn you all, to share my wisdom and be a cautionary tale. Do not, I repeat, do not eat cookie dough. Now I am not entirely sure that's what caused the 3 hour pain and nausea that hit me this evening. Yet if I had to take a guess I'd say that was the culprit. Considering I had nothing else to eat today it's really the only explanation short of a bout of the flu. I ended up having the lie down and felt wickedly ill. Lots of pain. Was not a fun few hours. So I'm telling you now … [Read more...]

Trumpets and Chocolate Chip Cookies, er…what?

No, no. I am not blowing a trumpet over my fabulous chocolate chip cookies. No one else is either. Well I'm sure they are worthy of trumpets, perhaps even a harp. But that is not what's going on here. I made something called trumpet cookies. Let me just tell you anyone who attempts making these should blow their own horn as these are not an easy peasy cookie to make. Takes a bit of finesse and creativity to get them right. After a couple of failed attempts I finally got into the groove. It's … [Read more...]

Boeuf Beaulieu (slow cooker)

So today brings another easy peasy recipe for everyone. I had leftover roast beef so I decided to make stew tonight. This is one of those recipes I probably never make the same way. So I made some notes while I was putting it together so I could post it for everyone. Slow cooker recipes seem the most popular request so far. This one is very easy to do. You could also do it in the oven if you wanted to. Just do everything the same but put it in a dutch oven and cook for about an hour and a half … [Read more...]

Deb’s Fudge, Kim’s Banana/Coconut Bread and Mom’s Shepherd’s Pie- Oh My!

So I am back with some recipes for you folks. Yesterday was a whirlwind so never got to do what I planned. This happens often here. Plans get made, plans get broken. Always so busy juggling things I need to do and don't get to do the things I want to do. Life of a busy Mom I think. My guess is most of us get our plans derailed quite often. Today was another crazy day but at least I fit in some cooking. Had errands to run, groceries to get. Then did some spring cleaning and laundry. Mounds and … [Read more...]
