So we were at the rodeo this afternoon which was a hoot and a half. Had a great time with our friends. But when you're out and about there's no time to cook. I needed a fast idea for dinner that would not heat up the house. It's wicked hot here today so turning on the oven was not an option. I was running through ideas in my head and coming up short. Since we don't eat a lot of processed, pre-packaged foods these days I was stumped what to whip up quickly. Then I started talking about gyros and we realized they sell it at some grocery stores now. So if I can buy the meat I could toss together a pita super easy. Hubby went up to scope it out and sure enough they had it. Now was it as good as a real high quality gyro, probably not. But for a quick weekend meal after sitting in the sun for hours I was totally okay with it. I was able to put together nice pita sandwiches for us easily and quickly. I used the foreman grill so I did not have to heat up the house. Worked perfectly. Now I have to admit I would love to make it from scratch one day. So that could happen some time in the fall. For now I've found we can have gyro without having to spend a fortune at a restaurant. This makes me happy. Hope you feel the same way and enjoy this quick, simple meal idea.
Gyros Pitas(store bought gyro):
Ingredients:
1 pound gyro meat
1 package pitas (we use the flat version)
1 head of iceberg lettuce, chopped
Tomato, diced (we did not include the tomato as I have an allergy to raw tomato)
Tzitziki sauce(this is to taste, I put about 2 tablespoons per pita which is quite a bit)
Directions:
Cut up the lettuce and tomato.
Cook your gyro meat on a foreman grill for a few minutes, about 4 minutes is good.
Heat up the pita for a few seconds in the microwave to make it easier to roll up.
Add the gyro, lettuce, tomato, and tzitziki to the pita.
Fold over and if needed secure with a toothpick.
Cook on the foreman for about 4 or 5 minutes.
Serve.
The foreman grill makes it a little flat but I like it all warmed up like this. This was a fab meal and I was able to make it in under 15 minutes. So yeah me!
I will be doing up a fantastic kebab recipe sometime this week. So look forward to that. I'm also going to do homemade ice cream sandwiches. That should be so much fun. I am waiting it out until mid-week though. Kiana is doing a project for school for exercise science that does not allow white flour or sugar so this past week has been a bit of a challenge. I am allergic to wheat so we don't keep much whole wheat products in the house. She's done really well with it so kudos to my daughter for sticking with it. Luckily she does not have as extreme sensitivity to foods as I do.
