Well praise the gods of summer I found a barbecue. We have been without one for about a year or so. We only used ours maybe once or twice last year. To be brutally honest we were terrified it would blow up it was in such a bad state. For those of you who know us well then you know my hubby has been laid off for 3 years and back in school getting his engineering degree for the last 2. If you didn't know that, well, now you do. It's been a long struggle and money is tight as I do not work. So we've muddled through as best we can. We've put off buying anything large obviously but we just could not do it any longer. Summers are too hot here. My hubby has been working part time for about 6 months or so on weekends just to make ends meet. This morning he surprised me a with more than typical pay check, I could not figure out why. Some holiday pay had been included we were not counting on. Not much but I squeaked out enough to pick up a cheap barbecue and the impending garage sale money can be put to use else where now. I really need a food processor but not sure everyone else would be on board with that plan for the money. Maybe we'll put it aside for a family day to Canada's Wonderland or something. Anyhow I now have a lovely new barbecue. Well, I have a nice new box with a barbecue in it. So hopefully C'Paul can find some time to put it together for me this weekend. I am so excited. I have a couple kebab recipes I am chomping at the bit to share with you. Now I need to scout out a good deal on a cover for it. Hopefully I can find one on sale somewhere. Maybe use our Canadian Tire money to pick one up. I do love a bargain. And free just sends me over the edge so let's hope that plan works out. I promise to post pics of the new barbecue once we get it set up. So that bit of news is over, now on to the recipe.
My sister Deb, who is my recipe guru by the way, sent me this recipe awhile back. I hadn't gotten around to making it until recently. So many recipes....so little time. I came across it last week and thought "yum" so I set out to get all the ingredients and wait for a cool day to make it. Of course I gave up on the cool day idea and made it last night in the wee hours to avoid melting the house. And yes you guessed it, of course it was cool today. If I'd only waited 12 hours. Ah, live and learn I guess. Or check the weather channel like a normal person would be a good idea. Why do I never check it? Anyhow, I made up this pecan pie and it was delish. I've never had the chocolate version before and now that I have I would highly recommend it to everyone. It is outstanding! Not that hard to make either which is always a huge bonus in my book. The pics will not do it justice. I do not have the knack for taking food photos. I need to sign up for some classes or something. If anyone has any suggestions to get a better picture with sharper, truer colour please feel free to offer some advice. I need help. (wow that is a loaded statement if I've ever heard one!!!) Okay so enough ramblings of a lunatic, bring on the recipe. Enjoy!
½ cup butter
1 cup white sugar
3 tablespoons all purpose flour
1 tablespoon vanilla
1 cup pecan halves
9” unbaked pie shell
Preheat oven to 325 degrees.
Whisk together eggs until just combined & set aside. Coarsely chop the chocolate and butter, then place in pot & stir while heating gently until melted. Remove from heat and whisk in the sugar, flour vanilla and eggs. Stir in pecans and pour into the pie shell.
Bake pie on a baking sheet in middle of oven until set and puffy, about 55 – 60 minutes. Cool pie on a wire rack. (normal for filling to fall slightly when cooled)

I was wondering if you have a good recipe for Honey Pecan Chicken. My hubby and I were married almost 17grown years ago (3/4/95) and this was the main entree at our rehearsal dinner. The restaurant where we had dinner closed over ten years ago. I would reeally like to have a good, easy recipe to surprise my hubby with. Thanks a bunch!
