Okay so this was inspired by all the s’mores posts I’ve seen. There are pancakes and ice cream posts that made me drool today. So I decided to try my own spin on s’mores. Hopefully you like it. I sure did. I have to admit it’s messy to make. I think if I did it again I would use marshmallow fluff instead of actual marshmallows. I did not have fluff on hand though so I just went with an idea and rode it out until the end. The end result- yum!
Ingredients for crust:
1 cup Oreo baking crumbs
2 tablespoons white sugar
4 tablespoons butter, melted
Ingredients for brownies:
8 tablespoons butter
2 squares unsweetened chocolate
2 squares semi sweet chocolate
1 cup sugar
2 eggs, beaten
1/2 teaspoon vanilla
1/2 cup milk chocolate chips
1/4 cup flour
1/4 teaspoon salt
Ingredients for marshmallow topping:
6 cups marshmallows
4 tablespoons butter
Non stick spray
Directions for crust:
Soften butter in microwave.
Put crumbs, sugar and butter in a bowl and stir well.
Spray an 8 by 8 pan with non stick spray or grease by hand. You could also line with parchment which would be the smart thing to do. I however did not do the smart thing and just sprayed it.
Press the mixture into the pan.
Place in a pre-heated 350 degree oven for 8 minutes.
Remove and set aside.
Directions for brownies:
Turn oven down to 325 degrees.
In a pot over low heat melt butter and squares of chocolate. Stir constantly with a wooden spoon. (wooden spoons rock for all things chocolate and also fudge) Remove from heat once melted.
Stir in sugar.
Add eggs and vanilla and mix until smooth. (using almond extract would also be nice in this)
Add chocolate chips, flour and salt and mix.
Pour batter over the crumb mixture. Smooth out.
Put in oven for about 40 ish minutes.
Remove from oven and set aside.
Directions for marshmallow topping:
In a large pot over low heat melt butter.
Add marshmallows and stir until melted.
Pour over the brownies and smooth out.
Now take a mini torch and scorch the top of the marshmallow.
Let cool and serve. (tip-spray knife with non stick spray as this is sticky stuff)
So the inspiration for the brownie recipe is from a fellow blogger. I’ve tweaked her recipe a bit. Not much though. This really is a great brownie. More of an ooey gooey brownie than a cake brownie.
