Dinner and Ice Cream = tummy ache!

Hello folks. Nice to be back to normal and cooking again. Think I overdid it today and made too much. I have issues with cooking too much. It is a sickness. Not sure why anyone needs more than one side but I like to have options. This tends to lead to tummy aches. Not a good thing.

So going to try and make this snappy. My daughter has soccer in the morning and I need to get to bed. So without all the fuss and gabbing here are some recipes.

Easy Salad:

1 container of artisan lettuce
1/4 red pepper, diced
1/4 yellow pepper,diced
3 green onions, chopped
1 roasted tomato, optional
2 tablespoon basil infused olive oil

Directions:

Wash and tear the lettuce. Place in bowl.

Chop up other veggies. Place in bowl.

Drizzle salad with olive oil and toss.

Optional step- roast a tomato on the grill and then pull apart and lay over salad.

Enjoy!

Grilled Corn on the Cob:

Ingredients:

Corn on the cob

Directions:

Place peeled corn on your grill over low/medium heat and cook for about 15 to 20 minutes. Flip occasionally.

Brush butter over top and serve.

Normally I boil mine but it is too hot inside.

Grilled Baguette with Drizzle:

Ingredients:

1 baguette
1/4 to 1/2 half drizzle oil, I used Roasted Garlic and Shallot

Directions:

Cut your baguette into pieces.

Put on a pan or platter.

Drizzle with oil generously.

Let soak for about 4 to 5 minutes.

Place on medium heat on grill for about 2 to 3 minutes each side.

Remove and serve.

So yummy!

Sirloin Steak on the Grill:

Ingredients:

4 to 5 steaks
Salt to taste
Pepper to taste
Barbecue sauce to taste

Directions:

Preheat your grill for about 10ish minutes.

Pat dry your steaks. Rub your steak with spices before grilling.

Place steaks on grill and cook for about 3 minutes on each side on high heat.

Brush on barbecue sauce and move steaks to other side of grill and cook over lower heat for another 8 to 10 minutes each side.

Remove and let stand for 5 to 10 minutes to let juices work their magic.

Serve.

Not a huge fan of sirloin but pickings were slim at the local store. Ugh! Small towns suck!

BBQ-ing should not always be difficult. Tonight I did dinner in under 30 minutes. If you time yourself and do things in a good order you can multi task and get it done quick. These were all simple recipes without a lot of fuss for one of those nights you do not have a ton of time. Hope you try them.

Oh wait, there is dessert. How could I forget the dessert, just wrong! Here is an ice cream recipe. This is my first time making ice cream. I figure if you are going to be bad, be REALLY bad. I went all out. Hope you like it.

Chocolate Fudge Brownie Pistachio Ice Cream a la Kim:

credit- inspired from the chocolate recipe from cuisinart booklet

Ingredients:

3/4 cup (175ml) cocoa powder
1/2 cup (125ml) sugar
1/3 cup (75ml)  dark brown sugar
Pinch of salt
1 cup (250ml) whole milk
2 cups (500ml) heavy cream, for us Canadian folk this means whipping cream
1/2 teaspoon (7ml) vanilla
3 mini bite size brownies, cut into really small pieces
3 pieces of bite size store bought fudge, cut into really small pieces
15 shelled and crushed pistachios, use about 2/3 the amount in ice cream, other 1/3 set aside to toss on as a garnish

Directions:

In a bowl mix your cocoa, sugars and salt together. I used a stand mixer with whisk.

Add the milk and mix on low speed until everything dissolves and is well mixed.

Stir in heavy cream or whipping cream and vanilla. Mix well.

Cover the bowl and put in the fridge for 1 to 2 hours, or you can do it overnight.

Take bowl out of fridge and make sure your ice cream bowl has been properly chilled for a day or so.

Transfer to ice cream bowl and put the machine together.

Turn on and mix for 15 to 20 minutes. Should thicken a lot.

Cut up your brownies, fudge and pistachios while it mixes in the ice cream maker.

Check your consistency, if pleased with it you can move on, if not mix for a few more minutes.

Now add in by hand your brownie, fudge and pistachios. Stir well.

Scoop into bowls immediately or stick in freezer for a couple hours.

If putting in freezer make sure you let it stand for 10 or 15 minutes when you take it back out.

Toss some crushed pistachios over top.

Enjoy!

This was so good I cannot even believe I made it. It should be in stores I swear!

I think I smeared ice cream on the camera by accident as all my shots have a fuzzy spot. Lol! Is this not the most amazing thing you have seen, well you should taste it. Seriously, hop on a plane and come on by. I will make you gain 10 pounds in 3 day I can assure you.

    Hi Beth- Thanks. I just got one. So in love with it. They have some cheap good ones on the market now. I saw one the other day for about $40, and another for $30. The home made ice cream is so good. But a bit pricey to make I think.

    Peggy- This ice cream should be on store shelves around the world. It is THAT good. I tend to get carried away. You should see this place on Thanksgiving or Easter. It's quite a sight. lol

    Thanks so much Jill! That was my first grilled corn experience and we have wicked corn here. I just like mine boiled. It`s classic to me. This ice cream is my fave so far. I am so thrilled to finally have an ice cream maker. Having way too much fun with it.

    Is there really a difference between heavy cream and whipping cream? Confused. I thought they were one and the same, but now I see Americans say heavy cream and Canadians say whipping cream.

    Yup I am just clarifying that for people. All cookbooks say heavy so if you're a canuck looking for heavy cream you will never find it. Americans call it heavy and Canucks call it whipping, I make sure I let people know which one they are looking for depending on geography so locals aren't endlessly searching for something they will never find.
