Hi folks. As many of you know I had house guests this past week. So I am a bit behind the eight ball on my posts. Hopefully you adore me enough to forgive me. I am trying to catch up so also feel free to forgive the onslaught of posts. I have so much to share though. So pulverize you with posts I must. I shall try to limit to 3 a day until they are caught up. But no promises. I don't do well with guidelines. I'm a rebel.
So I just got a message from my brother, not the camera forgetting old dude you already know. I have another bro who is a year older than me who lives in town. He's only a few blocks away. He's the nice one. If he had a fancy camera he would never forget it like old dude did. So this brother is Ken or as I like to call  him Ken-Ben (no idea why) or Mr Magoo (also no idea why). Have you noticed I never actually call anyone by their actual names??? It's like a sickness. I don't do it for the blog or security. It's just what I do. My son is B or Bray, my daughter is mini-me, the warden or munchkin, my husband is hubs or C, even the pets have cute nicknames. Anyhow Mr Magoo messaged me and asked me to stop by. He is cleaning out and organizing his home. He says he's finally moving in, only he has lived there for 4 years now so it is quite funny.  He has some stuff that belonged to my mother he wants to give me. He says he'd rather me have it as I would display it and that is better than it sitting in a box at his place. So I am beyond touched and know today will be an emotional one. For those who don't know my Mom passed away when I was 15. Very unexpectedly, she had a heart attack in her sleep. She was an incredible woman and not your ordinary Mom. We were all very close to her, she was one of those Moms who hung out with you, hung out and got to know your friends. She was amazing, and we were shattered when we lost her. Miss her every single day. So I know going over and seeing the stuff will send me over the edge today. Especially with Ken who doesn't talk about it much. So I may go off the grid for a few hours. But I shall return tonight.
Pistachio Ice Cream:
Ingredients:
1 cup whole milk
¾ cup sugar
Pinch of salt
1 package (99g) jello pistachio pudding, unprepared
2 cups heavy cream
1 tablespoon vanilla extract
1 cup pistachios, shelled and crushed
Directions:
MAKE SURE YOUR FREEZER BOWL IS FROZEN BEFORE STARTING THIS!
Put your whole milk, sugar, salt and pistachio pudding granules in a bowl and mix until sugar dissolves.
Add your heavy cream and vanilla, Â mix lightly.
Cover and set in fridge for 1-2 hours.
Shell and crush or chop you pistachios. Set aside.
Take your mixture out of the fridge and transfer to ice cream maker freezer bowl.
Turn on the ice cream maker and mix for about 15 to 20 minutes. Add your pistachios during the last few minutes.
Serve immediately or stick in the freezer until ready to eat. Just remember if you put it in the freezer it's always good to take it out about 10 minutes prior to serving.
