Fruit Salad with Vanilla Syrup, Pink Yogourt and Pistachios: My Guest Post For Cooking Healthy For Me

Hi folks. I have a very special treat for you today. The added bonus is that it is a healthy treat. I know that’s rare from me. Life is all about balance. So when you spend the weekend eating your weight in cherry  Hershey kisses, chocolate covered marshmallows and brownies, well you start to crave some good stuff. Well you may not but your arteries will.

This lovely treat can be seen over at Cooking Healthy For MeWhen Ann asked me to guest post for her I was so stunned happy. Um, Ann you have read Cravings of a Lunatic right? You are my biggest fan so um, have you noticed the complete lack of healthy recipes tiny amount of healthy recipes I post? I was thinking geez she must be crazy  really love me. I was scared to death she’d made a mistake so stoked she asked and was determined to do her proud. So I spent about a minute eons trying to decide what to make for her. I mean I surely must have one tons of healthy recipes up my sleeves. Then Ann told me the date she wanted me to guest and I was late meeting my deadline it all came together quickly. She wanted me to post a couple of weeks before Valentine’s Day. That is when the magic began.

    I love the heart shaped fruit. I am thinking it took a long time and a lot of patience. I am thinking that mine would be chunked and thrown at the hungry hoards. You are my fruit chopping hero!

    Funny Kim that you should mention living in the middle of nowhere and lemongrass. I juat posted lemongrass soup after having ventured a number of mile to seek out curry leaves. Didn't find those but found the lemongrass. Love this fruit salad and your hilarious commentary.

Now you've got me thinking that this would be a romantic healthy breakfast on Valentine's Day and I could still do the chocolate dessert I have planned for that night.     Greek yogurt is the bomb diggity. Love it. This was just fun to do. A bit tedious cutting them out but I had a blast.
