Mandarin Orange Chicken Salad for #SundaySupper

Chicken Salad with mandarin oranges

Hi folks.

First of all I need to do something before I continue with Sunday Supper. Okay here goes…

HAPPY THANKSGIVING TO MY FELLOW CANUCKS!!!

Okay, sorry but that had to be done. This weekend is our Thanksgiving so people are celebrating and having fabulous dinners. I sure hope all you Canucks out there had lots of turkey, ham, taters, stuffing, and hordes of apple pie. I hope you hung out with family and stuffed yourselves silly.

I was pretty bummed B-Dude won’t be here this weekend, not going to lie. Our first holiday weekend without him. Luckily my Auntie Judy and Uncle George invited him over for dinner. I felt so much better when I found out. So big shout out to my Auntie Judy and Uncle George, Bobbie, Gus, Kaylee. A special shout out to my cousin Kent who went above and beyond to pick B-Dude up. I wish I could have joined the festivities.

We are postponing our own dinner. Mini-me is going to Boytoy’s for dinner today, and hubs has to work Monday. So I’ve decided since I’m still not up to par I’d take the opportunity to put off the big dinner. Maybe we’ll celebrate with my American friends or something. By then I should be in full cooking like a champ mode. Right now I’m operating on about half my stamina and strength. Which is still huge progress. So yah for progress and being able to stand up for a few hours at a time. I need to conserve my energy right now though. I start a new part-time job on Tuesday. Only a few hours a day, but it’s a physical job so I figure I should keep some energy in the reserve tank. I’m guessing the first week will take a toll. I know I’m not quite my usual self, normally I’m all “strong like bull”, but nowadays I’m more “meek like mouse”.

Okay enough crazy rambling, on with the show!

chicken salad

This week the Sunday Supper theme was “All Thing Orange”. I’m not going to lie. This was a challenge for me. You will be horrified when you learn why…

I don’t like pumpkin!

Ya, you heard me right. Totally not kidding.

I feel like I should be kicked out of the food blogging community for this one. But I really don’t like it. At all.

I know right! It’s madness!

I do however like oranges. Not just “like” but “like like”. Maybe even “love”. Maybe even the kind of love that gets a restraining order and a change of address. It’s THAT kind of love.

When we went to Florida this year for the first time everyone was all “you must be so excited to be going to Disney”. I was like “meh”. What I was really stoked about was this…

(and don’t think I’m crazy…

cuz I’m totally not.

Okay that’s a lie…

I totally am.)

…the reason I was so stoked was…

I wanted to eat a Florida Orange…

IN FLORIDA!

I know right.

Certifiable! That’s me! I honestly was so freaking excited about this. You have no idea. We bought 4 oranges at Whole Foods. I waited till they were cold. Cuz they are just better cold. Then I cracked one open like my life depended on it. I made noises no person should ever make while eating food. Let alone in the car with her kids. I think I may have traumatized them for life.

And when I say I cracked it open like my life depending on it…let’s be real here. If any of you have read my policies page and read the disclaimer, well, then you know how I am when I eat an orange. It’s a Lunie thing. I can’t even begin to explain it.

Since really good oranges can be hard to find here, particularly as the weather cools down, I like to have a back up plan. My back up plan involves oranges. What? Like yours doesn’t.

So I buy copious amounts of mandarin oranges in the little jars made by Dole. Holy freaking moly people, these things rock. I mean I can eat them by the truckload. Just back the truck up and I’ll work my way through them with a giant spoon and a smile. They are THAT good.

It made perfect sense to me to do a recipe with mandarin oranges for this week’s event. So I put my thinking cap on, and when that didn’t work I used an old standby recipe. This is one of my favourite things to make when no one is home. Just me and my oranges. Ah, life is good.

This is super easy to make. You can add extra stuff to it, but seriously why would you. You want it to be simple and just let the flavour shine through. So get your orange on and mix up some salad. You’ll give me a big old citrus kiss once you try this.

But don’t…

cuz Lunie doesn’t like random people kissing her!

Unless you’re Timothy Olyphant…

Then have at it!

Mandarin Orange Chicken Salad for #SundaySupper
Author:
Recipe type: Salad, Main
Prep time:
Cook time:
Total time:
Serves: 4

An easy recipe to make a wonderful salad filled with chicken and mandarin oranges!
Ingredients
  • 2 large boneless, skinless chicken breasts, cut into small pieces
  • Olive oil
  • 2 tablespoon teriyaki sauce
  • 2 tablespoons mandarin orange salad dressing (use juice from oranges if you don’t have this)
  • Salt to taste
  • 6 cups lettuce, I used different kinds, use what you love and tear it up
  • 2 cups mandarin oranges, juice drained
  • Optional: mandarin orange salad dressing
Instructions
  1. in a skillet or pan, cook your chicken over medium heat in a little bit of olive oil.
  2. Stir around the pan while it browns, about 3 minutes into it add the teriyaki sauce.
  3. Let that cook for a couple of minutes then add your salad dressing. Cook until the dressing absorbs into the chicken.
  4. Depending on the size you’ve cut your pieces and your stove, it should take about 5 to 8 minutes total to cook.
  5. Place your lettuce in a giant bowl.
  6. Lay your chicken over top.
  7. Then lay your mandarin oranges over top.
  8. Drizzle with dressing if you like.
  9. Serve with a big old citrus-y smile!

chicken salad

You can drizzle with salad dressing if you like. I’m not a salad dressing kind of chick. I like my salads plain. But if you are all weird and stuff, feel free to pour some mandarin orange dressing over top. I like to cook with dressing but please don’t pour it over top of my salad or I’ll go all ninja on ya.

Seriously,

I will.

Okay, that’s a lie. Remember “meek like mouse”.

But beware, I’m making lists and in 2 to 4 months when I feel better and am “strong like bull”…I’m coming for ya!

So make sure you stop by all my Sunday Supper peeps and see what orange stuff they whipped up for you. I know there are lots of pumpkin recipes. Cuz normal people like pumpkin. Or so I’ve heard. From some normal people. And pinterest.

Join us for Orange Autumn Recipes this week  and share your favorite #SundaySupper with us during our chat at 7pm eastern time.  There’s always room for one more Around the Family Table.

This salad is the perfect way to start!

    Cheers

I like that you made a salad with chicken and fruit! Funny story with oranges. I get that way about certain foods too. Have a great sunday!

    • 4

Thanks. I’m a fruit kind of gal. I always tell people I could be a fruitarian much more easily than a vegetarian. Love oranges. Like way too much.

  3. 5

My grandparents owned and lived on a orange grove my entire life. I completely relate to you wanting to try a FL orange – there is nothing better than a perfect orange freshly picked. Great recipe!

  4. 7

I love the asian flavor in this! Cold mandarin oranges and warm chicken – yum!

    • 8

Thanks. I tend to add teriyaki and tamari to everything. Love the taste of it. I am also a huge fan of the cold fruit with the hot chicken. Not sure why but it just floats my boat.

  5. 9

Love this recipe! Healthy and simple. I am jealous of your gorgeous salad bowl!

    • 10

Thanks Dara. I am trying to remember where I got that. I think it might have been a half off sale in the cookbook department of indigo books. I try to pull it out whenever I get a chance. Hope you enjoyed your first SS.

  6. 11

This sounds like a recipe my husband would love! Thanks so much for sharing it!

  7. 13

Happy Thanksgiving! Nice looking salad – love the combo of orange and chicken. Back when I lived in Florida, I had 3 orange trees in my yard (all different varieties). Plus a lime tree. Plus a Meyer lemon tree. ;-) Can you say delicious and fresh? There is nothing like going out in the morning and picking a big bowl of oranges, then turning them into freshly squeezed OJ. So good – I miss that.

    • 14

Thanks! I’m having a lazy one this year. Sitting watching movies and making a simple dinner of baked potatoes and BBQ chicken. I even made little heath cookies for dessert. Best I could do right now.

How cool you used to live in Florida. I would love to live somewhere warm. I was not intended for our harsh Canuck winters.

  8. 15

I’ll fight you for the oranges. :D

  9. 17

Happy Thanksgiving!! We too will celebrate the holiday here in the USA because my husband and daughter are Canadians. It’s always a fun night w/ friends & family. I love this idea of a salad wsith Oranges. I will have to try.

    • 18

Thank you. Happy Thanksgiving to you as well. Love the holidays. Just chilling with family is nice. I am just chilling solo this year till I feel up to cooking the big dinner.

You must try this. It’s so refreshing and tasty.

  10. 19

Your chicken salad looks and sounds amazing!

  11. 21

Happy Thanksgiving! This salad looks super tasty–I love having a juicy bite of mandarin orange in salad!

  12. 23

This looks absolutely AMAZING! i love the mandarin orange salad and your photo – literally – jumps off the page. I wanna grab a fork! YUM, yum!

    Oh….and Happy Thanksgiving!

    • 24

Thanks Ann. I had fun playing with this one. I must have had every piece of orange fabric out that day.

Thanks. I’ll be celebrating with my American friends this year.

  13. 25

My mouth is literally watering. I have to try this recipe. Looks so good!!

  14. 27

I don’t think you’re crazy. Everyone should visit Florida and enough our fresh oranges!!
Love the recipe, and you make it look delicious and easy! Cheers!

    • 28

Yah, so happy not everyone thinks I’m nuts.

Thanks. I love easy recipes. Makes time for other more important things in life.

  15. 29

Happy Thanksgiving Kim! I like pumpkin, but I think I would take oranges or butternut squash over it any day. Great recipes, I’m going to grab a few of them.
    -Gina-

    • 30

Thanks Gina. I wish I liked pumpkin, it’s such a popular thing right now. But I just don’t care for it. Oranges I love, way too much. Thanks for stopping in.

  16. 31

Happy Thanksgiving Kim! I love this salad, so simple and delicious! Also regarding the Florida oranges, my mom used to bring back a big bag every time we went to visit my grandmother and my dad used to yell at her about schlepping that on to the plane. Now they live in Florida, so mom gets her orange fill!

  17. 33

The salad looks great and I know my husband would like it because of the oranges, teriyaki, and chicken. i’m adding this recipe to my list of salads. Oh, and I don’t like pumpkin either.

    • 34

Thanks Renee. Hope you try it for him. I’m a teriyaki nut, I put it on everything.

Glad to know I’m not the only pumpkin disliker.

  18. 35

I don’t like most oranges. There I said it. I love blood oranges and clementines but regular oranges? Mandarin oranges? Orange juice? Gag. So if we are ever in Florida together, you can have my oranges. I will take your pumpkin ;)

    • 36

Sounds like a deal to me. I’m partial to satsumas. I mean complete love. Can’t get enough. You can totally have my pumpkin!

  19. 37

Happy Thanksgiving! My neighbor is celebrating Thanksgiving as we speak. She has two Thanksgivings every year. One Canadian and one American. She loves every minute of it! Lovely salad. I love this combination of chicken and oranges.

  20. 39

This is almost identical to the one my grandma would make for Christmas! Was never a fan but then again it’s been years!

  21. 41

LOL. I’m picturing the scene from “When Harry Met Sally” with you, your kids and an orange ;) I love mandarin oranges (mandarin orange cake is a classic in my family), but hubs won’t go near them. Says they taste bitter. Your salad looks like something I’d love!

    • 42

      *falls down laughing*

Oh man I like the sound of that cake. Bummer your hubs doesn’t like mandarins. I like you have to like a good pucker. Lol.

      Thanks.

  22. 43

I love a citrus salad and it’s nearly summer and this salad would be perfect right now. I loved Florida oranges when I lived there. I miss them and Vidalia onions. :)

    Happy Thanksgiving!

    • 44

Thanks so much Maureen. I would love to live somewhere warm. Vidalias are the bomb too. Love them, my fave onion. So sweet and yummy.

      Thanks. xx

  23. 45

I would go crazy if I could citrus trees. I need to move. Lol.

You did a fab job hosting Pam. It was a lovely event.

  24. 46

My kids and I love mandarin oranges!! I could eat a truck load too. :) Love the salad.:) Hope you have a great time in your Part time job! Can’t wait to get you at 100%… but you’re still doing amazing with all you do. You must be like the energizer bunny when you are at 100%. :)

    • 47

Yah, love a fellow mandarin lover.

I am sure I am going to enjoy the job. Being around the horses all day will feel more like fun and not work.

I am a spaz at full strength. I think it’s why when I get sick it takes so long to recover. I wear myself right the heck out.

  25. 48

Happy Thanksgiving! And I LOVE mandarin oranges in the can by Dole. I grew up on them and love, love, love them :-)

    • 49

Thanks. Aren’t they just amazing. I cannot buy enough of them. I actually eat them for breakfast a lot. Not a huge breakfast gal, but fruit I can do. Mandarins make me happy.

  26. 50

I love chicken salads and the oranges are a welcome addition.

  27. 52
    Stephanie Zielinski says:

Thanks for sharing a classic salad, Kim and Happy Thanksgiving!

  29. 56

Happy happy Thanksgiving Kim!! I was so happy to see mandarins in the store this week – the season is here! This salad looks great.

    • 57

Hope you had an amazing Thanksgiving with your family Anna. I love mandarins. They just make me happy. I eat them for breakfast when I have them in the house.

  30. 58

Great idea to use it in a salad. Will try it next time :)

  31. 60

Hope you had a great Thanksgiving, Kim! LOL! Your posts really crack me up! This salad looks amazing!!!!! Lyn likey!

    • 61

Thanks Lyn. Hope you are well. I love this time of year. The food choices are awesome. Glad to give you a giggle. I love to get silly.

  32. 62

So delicious looking, and healthy. Thanks for sharing such a great dish. Perfect for summer.

  33. 64

Happy Thanksgiving, even if you’re delaying the festivities. And congrats on the new job. What kind of job? What will you be doing?

    • 65

Thanks Anita. I figure we’ll celebrate with our American friends this year. By then I’ll be my energizer bunny self.

Awe thanks. It’s just an easy peasy job, the owner of the barn where we keep our horse decided to go back to work so they asked if I’d be up to helping out. Hubs just got laid off (don’t think I mentioned that) so I jumped at the chance to make some bucks to offset her board. Plus I get to spend a few hours a day hanging with horses. My fave thing in the world to do. The fresh air is amazing, I feel fabulous this week, tired but invigorated. Now I’m considering joining WW just to retrain my brain to cook differently while I drop some weight. It’s pricey though, I was sort of surprised how much it is.

  34. 66

ha! ha! ha! Then I better not tell you that I used to live in Florida??! Don’t feel bad about not liking pumpkin. I don’t like fennel or curry, so maybe that’s a big foodie faux pas, too?!

    • 67

Oh man you’re killing me. I am not a huge curry gal but I do love fennel. It reminds me of licorice or something. I think we all have our quirks. I wish I like pumpkin. It’s such a cool thing to cook with.

  35. 68

lol I love how much you love oranges! They’re good for you and they’re delicious so eat on, sister! This salad looks so fresh and yummy. And the fact that you used the canned mandarins means it can be made at any time of year. Happy Thanksgiving from one Canuck to another!

    • 69

Thanks my dear. I am an orange loving lunatic. I buy the jars or canned ones not only cuz it’s good any time of the year but I love eating them for breakfast. Not a huge breakfast eater but love fruit if I do eat it. Hope you had an amazing Thanksgiving. We chilled. I’ll celebrate with the Americans this year.

  36. 70

Eaten this at restaurants, but never made this at home. Will try now that you’ve provided a lovely recipe. Looks great !

    • 71

It’s so easy to make at home. They never give me enough oranges when I order it at restaurant. Thanks so much. Hope you try it out.

  37. 72

Happy Thanksgiving!!I love oranges and this salad looks like a light and a delicious meal at anytime :)Congrats on your new job too :)

  38. 74

My husband doesn’t like pumpkin either, so I understand. What a great salad – great use or oranges!

  39. 76

    This salad looks absolutely amazing!

  40. 78

Wow…love this chicken salad with mandarin oranges. Like the way you cook the chicken too. I am going to try it soon! Thanks for sharing!

  41. 80

I love me a good Mandarin Orange Chicken Salad! this looks delicious! And it’s ok that you don’t like pumpkin! This salad makes up for it! :P Thank you for sharing!

  42. 82

Kim, your post cracked me up. You are like me in not being able to complete a thought and rambling on about things. Your writing is so entertaining! I should be kicked out the food blogging community for not liking cheese. We all have all faults but we are accepting of one another and #SundaySupper is a safe place. We don’t judge. Well actually we do but we don’t make it obvious. lol. Love your salad!

    • 83

I like the way we think. Lol. Thanks so much for the compliment. I love making people smile and laugh. Your comment had me in stitches. I could not stop laughing. xx

  43. 84
