Lasagna Soup is a simple and tasty way to enjoy pasta. This recipe is a staple in our house during the cooler months. Kids love it as much as adults.
I cannot believe another week has flown by. Where does the time go? I feel like time is just racing by right now. I have to admit I'm barely keeping up with blogging and life in general lately.
For the first time in 24 years I am no longer a stay at home mom. I am working part time. It's not a lot of hours but it's hard work. I work at a farm with horses, so every day is an adventure.
This week with the crazy weather the horses had to stay inside. If you know horses they don't like being cooped up. They are like people that way. Too much time chilling out and they start to bounce off the walls and act a little crazy.
The other day it had dried up enough that they could go outside in the sand ring to stretch their legs a bit. After being stuck inside all week let's just say it was total chaos. Each pair kicked up their heels and  gave a bucking bronco performance worthy of a horsey Oscar.
The last pair managed to open a gate that was chained and go prancing off into the field for grass. Mini-me had finished riding our horse, Ginger, and when she peeked out to see how the boys were outside they were gone.
I could not for the life of me figure out where they went. The gates were freaking locked. I thought maybe they were frisky enough to jump the fence. But no, they somehow managed to push the gate open and jimmy the chain system. Little hooligans.
Mini-me went one way, I went the other. I heard her yell she found them. As I came around the corner one was in the ring and the other one saw me and bolted. I couldn't help but laugh, it was so funny.
He must have thought, oh crap there's the strict one and I'm in SO much trouble. He took one look at me and ran for the hills. After I finished laughing, mini-me tried to reason with him but he wasn't having any of it.
I grabbed a bucket of grain and walked out. Took two shakes of the bucket to get him to come over, put his head down and let himself be captured. I handed him off to mini-me cuz I was still mad at him and she led him back to his boring stall.
I cannot tell you how panicked I was when we thought they were actually lost. Can you imagine losing other people's horses? Not my finest moment.
There are days I love them, and there are days I'd like to send them to their stalls in frustration. Most of them are wildly funny and keep me smiling from the time I get there till the time I leave. Being around horses most days is good for the soul!
This week I've also been freezing my butt off outside. It is quite cold in Ontario this week. So this week's theme for Sunday Supper was perfect for me. "Dishes to keep you warm, a soul warming #SundaySupper" was our theme.
I am all for that when I come home shaking. This soup is perfect for cold weather. You need to make this. You need to make this asap. You really NEED this soup in your life. Like right NOW. Trust me, you'll thank me later.
I used Paula Deen's Lasagna Soup recipe on The Food Network as a guide. I changed a couple of minor things to suit our tastes. Paula nailed this one. It's incredible.

Lasagna Soup
Ingredients
- 1 pound ground beef
- 1 medium sweet onion chopped
- 1 medium green pepper chopped
- 3 cloves garlic minced
- 1 tablespoon brown sugar
- 32 oz beef broth
- 28 fl oz can whole peeled tomatoes pulsed in blender
- 24 oz pasta sauce
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon salt
- 2 cups lasagna noodles broken
- 5 oz grated parmesan cheese
- 2 cups mozzarella
Instructions
- Brown the ground beef, onion, and pepper in a large dutch oven. It should be broken into fine particles and cooked till juices run clear.
- Add the garlic to the dutch oven during the last minute or two of cooking.
- Now add your brown sugar, beef broth, tomatoes, pasta sauce, oregano, basil and salt. Bring to a boil. Reduce heat and simmer for about 20 minutes.
- Add the noodles and simmer until they are tender.
- Stir in the parmesan cheese.
- Turn on your broiler. Allow it to preheat properly.
- Transfer soup into ovenproof soup bowls. Top with oodles of cheese. Place the bowls in the oven and broil for 3 to 5 minutes, or until cheese is golden and bubbly.
- Remove from the oven and serve.
