Peppermint Marshmallows are easy to make for the holidays. This marshmallow recipe tastes like peppermint candy canes.
Welcome to day 2 of Christmas Week. So excited to show you today's treat. I made marshmallows, seriously, homemade marshmallows. They are super easy to make and fun to eat. You can do so many varieties of marshmallows. I made peppermint ones for Christmas. Not only are they adorable but the taste fabulous. They also make wonderful gifts.
I love making homemade gifts. I make everything from fudge to hot fudge sauce to vanilla for friends and family. I also love making people vanilla sugar, vanilla brown sugar, and vanilla salt. There's something about going into the kitchen knowing you are making something sweet for someone special in your life. For me I like to turn on the Christmas music and get into the groove of it all. Holiday baking is like my Christmas kick off. We tend to start later than most people when it comes to decorating. As of right now I don't have my tree up or house decorated. We've always done real trees and I find if you put them up too early they dry out and look like crud by Christmas day. So we hold off and usually put the tree up about a week before Christmas.
This year we'll probably put one tree up next week then the other tree up when B-Dude comes down to visit. Our upstairs tree is usually decorated with store-bought ornaments and ornaments my kids and family members have bought me over the years. The downstairs tree is usually decorated with homemade ornaments. We do tons of gingerbread men and use them on the tree. It always looks and smells fabulous. It is one of our many family traditions. We have a day we decorate cookies, a day we make a huge gingerbread village and we always take a day to go pick out a tree or two. I have to tell you upholding family traditions is extra special in this house. Years ago we bought my folks home after my father passed away. So we now spend holidays celebrating with our kids in the same house I celebrated holidays with my own folks. It means the world to me.
I encourage you to start your own traditions. It's fun to see the family get excited each year when they smell gingerbread or see the candy come out for the villages. Makes my heart happy! Hope you get to make your heart happy too!
Peppermint Marshmallows
Ingredients
- Non-stick spray
- 2 cups sugar
- 1 tablespoon corn syrup
- ¾ cup water
- 4 packages of unflavoured gelatin
- Another ¾ cup water
- ½ teaspoon peppermint extract
- 2 large egg whites
- 2 teaspoons red food colouring
Instructions
- Prep an 8 inch square pan by spraying it with non stick spray. Then line the pan with parchment. Set aside.
- In a small saucepan combine sugar, corn syrup and water and cook over medium heat, stirring until the sugar dissolves. Stop stirring and let it come to a boil over medium high heat until it reaches 260 degrees.
- In the meantime put ¾ cup of water in a heat proof bowl and sprinkle the gelatin over it. Let stand for 5 minutes while it softens. Now set the bowl of gelatin over a pot of simmering water and whisk it constantly until the gelatin dissolves. Remove from the heat and add the peppernint extract. Set aside.
- Now beat the eggs whites in a stand mixer with the whisk attachment until they get a bit stiff.
- Take your gelatin mixture and add it to the sugar mixture. Give it a stir then gradually add this to the mixer with the egg white mixture. Mix until it thickens a lot, takes about 12 to 15 minutes.
- Pour this into the pan you prepared earlier and smooth out. Work fast and add drops of red food colouring to the pan. Take a toothpick and drag it back and forth through the pan to swirl the red into the white.
- Let the marshmallows set for about 3 hours, or overnight.
- Cut into squares.
- Use in hot chocolate, or put into tins or plastic bags to give as gifts.
- Serve with a big old pepperminty smile!
I have to say it's reason like these marshmallows that make me love Martha Stewart for too much. I found this recipe online and loved it immediately. Martha rocks. She always has such cool ideas for holidays. The woman is a domestic goddess. I just wonder if she swears as much as the rest of us domestic goddesses. I bet she does. I'd love to have a swear off with this woman. I bet she could kick my butt.
