      They really are. There’s just something about them. What’s funny is I never ate them growing up as I hate my food to touch. Weird right. I’m a little more open minded now, not a lot, but a little. Ha.

    Hi Kim, you’ve got an amazing line up of recipes here, it would be hard to pick a favorite though those potatoes seem to be calling my name!
    I loved meeting you this weekend, hope you got safely home! I’m feeling like I’m in Canada tonight, it’s quite frigid here in NC! know I”m a puppy though when it comes to weather, even though my roots are northern :)

      It’s frigid here but my son is in Alberta and they just got hammered. I think it was about 30 below or something. Crazy.

    It’s funny but husband and I have started making more and more one-pot meals but always on the stove! I love casseroles but just don’t think of making them so thanks for the inspiration and all the great ideas!

    Of all the food blogs in the world, I had to stop by this one — and see all of these wonderful casseroles. You know what? I’m gonna put off my (mostly) vegetable goal over to February. These look too damn good!
