I made a breakfast food. I know right. This is HUGE. I rarely post breakfast food. So this is a real treat. For you and my family. Who happen to love breakfast.

Truth be told I rarely eat breakfast. Which is horrible. I’ll admit it’s an awful habit. It’s something that just sort of happened because of my IBS.

But this gal is kicking her “no breakfast” habit. We’re attempting to make some changes to our routine at the B Compound. So why not start with breakfast.

So when I had the opportunity to work with my buddy Kathy on this event I jumped at the chance. Food and friends, that’s the meaning of life right!

I whipped up her Blackberry Mojito Overnight Refrigerator Oats and was super pleased I chose this recipe. It is freaking amazing. I want to eat this every day, all the live long day.

You should make this. And eat this. Every day. All the live long day.

Blackberry Mojito Overnight Refrigerator Oats

Sweet juicy blackberries soaked in bright lime and mint flavors with the faintest aroma of rum will perk you up even on the toughest mornings. You can add a teaspoon or two of chia seeds to make this extra thick.
Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • 1 cup 165 g blackberries (cut in half if large)
  • 1/2 cup 120 ml unsweetened nondairy milk
  • 1/3 cup 31 g rolled oats
  • 2 tablespoons 30 g minced fresh mint or 1/8 teaspoon mint extract
  • Zest from 1/2 lime or 1/4 teaspoon lime oil
  • 1/2 teaspoon rum or rum extract optional
  • 1 tablespoon 15 ml agave, to taste (or you can use another sweetener, to taste)

Instructions

  • Combine all the ingredients in a mason jar or a dish with a cover.
  • Mix well and let sit in the fridge overnight.
  • Stir and eat.

    My favorite tool is the OXO Cherry Pitter- I have 7 pounds of cherries waiting to be pitted and made into jams, claufouti and muffins, and there is no way I’m doing that all by hand! The product I would be most excited to win would be the Cupcake Corer. Until I watched some cooking shows I truly thought getting the inside bream, jam, chocolate, or anything inside a cupcake was a baker’s secret! Now that I know, I can’t wait to use one on my next batch of cupcakes! Thanks!

    The craziest dish I’ve made with oats is soup. I accidentally scooped out some steel-cut oats and put it in the soup. It ‘worked’ surprisingly well!
