Hi folks. As you well know I have started on a bit of a journey to try to lose a bit of weight. So today I made a chicken salad for lunch. Which is remarkable for three reasons:
1. I never eat lunch.
2. I made a salad.
3. I ate a salad.
Or you can skip on down for the recipe from today. But I will hold you personally responsible for my failures and falls off the dessert cart (wagon) if you do not not cheer me on. Kidding, kidding. I have not stalked anyone in a long time. Ever since that restraining order….what…oh my lawyer says I can not talk about that. Just forget I said anything.
Chicken N Mandarin Salad:
1 pound of boneless skinless chicken breast
1/2 leek, chopped
1 large pack of artisan lettuces (artisan lettuce is a combo of petite oak, petite gem, and petite tango)
1/2 jar of mandarin oranges
2 to 3 tablespoons General Tao Sauce
1 to 2 tablespoons of roasted garlic and shallot drizzle oil
1 to 2 tablespoons of basil infused olive oil
Cut up leeks.
Cut up chicken, I bought fillets so really did not need to cut. I just broke them up in pan as they cooked.
Cook your chicken in a nice olive oil with your leeks. Cook over medium heat, stirring often.
Once chicken begins to brown slightly add your General Tao Stir Fry Sauce. (any stir fry sauce is good)
Cook for about a minute or two then add your roasted garlic and shallot drizzle oil. You could use minced garlic if you have no oil.
Continue cooking until browned to your liking.
Meanwhile wash your lettuce and place on plates or in bowls. Should you use a bowl it should fill it 3/4 of the way full.
Drizzle basil infused olive oil over lettuce.
Drain juice from mandarin orange slices.
Once chicken is done place on plate or bowl over the lettuce.
Now add mandarin oranges on top.
Serve and enjoy.
My fave kind of salad. Love the oranges with the chicken. So yummy!
