This simple and quick dessert looks really impressive. It also tastes super decadent, and people will adore you when they try it. What I love about this is how easy it is. There's just something so satisfying to me about tricking people into thinking you spent all day on a dessert when you really only spent a few minutes. I have no idea what that says about me on a personal level, but I get a charge out of pulling the wool over people's eyes on occasion. Don't judge.
I'm a huge cherry fanatic, whether it is cherry season or not. If it's not I'm not above opening a can of pie filling and turning it into a fabulous treat. I love it so much I can often be caught eating it right out of the can, rumour has it there's video but I've never seen it. In my world if you don't have video proof it never happened. Good rule to live by if you ask me.
Coconut is another huge addiction of mine. I cannot get enough of it. I buy coconuts and have a whole routine I use when whacking them open. I buy young coconuts whenever I find them which is not easy in my area. Bags of shredded coconut are okay by me too. As are coconut milk, water, and really anything coconut related. I just love the taste of it.
Now combine coconut and cherry and it's a partah if you ask me. I can't help but be in a good mood when these two super de duper foods combine. It takes me to my happy place and I never want to leave. It's sheer perfection.
Speaking of perfection let me tell you about a friend of mine. Her name is Izz and she's a fellow Canuck. You might know her as Isabelle of Crumb. She is amazeballs. I love this lady oodles and bunches. I met Izz through blogging, and we just hit it off. I take occasional trips to the city (she's about 4 hours from me) and we hang out. We've met up a few times now and I just love spending time with her. On one of the more recent trips we went to a Farmers Market which was so much fun. They have them year round in the city which they don't locally. We went out for some amazing pizza after. It was so much fun to hang out with a fellow foodie. On another trip we went for lunch and then went to see Lidia Bastianich together. Trip of a lifetime.
What I love about Izz is how down to earth she is. This woman is just 100% herself and comfortable in her own skin. I dig that about her. You just relax when you're with her and it's easy conversation. Hanging out with her is one of my fave things to do any chance I get.
When Izz emailed me to say she was looking for guest posts while on her honeymoon I was happy to oblige. She guest posted for me and made this really decadent and delicious Turtle Cheesecake Pizza. I was so blown away by her recipe. I always swore if she ever contacted me to guest for her that I'd repay that over the top pizza in a big way. But then I travelled to Florida, spent about 3 days at home, then scooted off to Philly. So baking something impressively time consuming was not in the cards. I reached into my quick and easy arsenal instead. But just so Miss Izz knows, and you all know too, I owe her a big, beautiful over the top dessert when she gets back. So hopefully she will let me share another recipe with her readers this summer. Something epically awesome, just like Izz.
