Cookie Dough Ice Cream Sandwiches #IceCreamWeek
Ingredients
Instructions
- In a stand mixer combine the whole milk and sugar. Whisk on high speed until sugar dissolves. (always start slow so you don't splash liquid all over the place)
- Add vanilla. Give it a quick whir.
- Add the heavy cream and salt to the mixer. Whisk until it becomes fluffy and almost whipped cream in texture.
- Cover the bowl and pop in the fridge for at least an hour, or overnight.
- Remove and transfer to an ice cream maker.
- Turn on and churn for about 10 minutes, just until it starts to thicken and harden a bit.
- Now toss in the broken bits of cookie dough. Keep whisking until they mix into the ice cream.
- Stop the machine and remove the bowl. Cover and pop in the freezer until ready for it. I find it takes about 2 to 4 hours to harden.
- If you want to make it easier to form the ice cream sandwiches you can forgo freezing it in the machine. Instead pop it in a shallow 9 x 13 inch casserole dish lined with parchment. Smooth it out and pop in the freezer overnight.
- Now when you take it out you can cut the ice cream with a biscuit cutter or a glass that's the same size of the cookies you're using.
- Cut your ice cream and place it between two cookies. Press together.
- Eat right away or wrap in plastic wrap till you need them.
- Serve with a big old cookie dough smile!

Aren’t these adorable ice cream sandwiches? I had fun with this one. I mean who doesn’t love cookie dough. I may have eaten half the package before it went into the ice cream so you may want to adjust the amount you use since my measurement on that one may be off a bit.
Cookie dough in ice cream=wee bits!
Cookie dough in Kim’s belly=whole bunch!
I was suppose to make homemade cookies but it’s summer, it’s hot in the house most days so turning on the oven just isn’t appealing. Once it cools down a bit I want to tweak these and use homemade cookies. For now they are cheater ice cream sandwiches and I’m totally cool with that.
I hope you continue to join us each day during Ice Cream Week. We have a giveaway happening now for a Cuisinart Ice Cream Maker and some Ice Cream Cookbooks so make sure you stop by to enter.

What a great way to start saying goodbye to summer! I’ll need one of the sandwiches every night until summer is over!
Kim Beaulieu says
Thanks so much lady. These were so good. I can’t get enough of them. I’ve made them two more times.

Sometimes we need quick and easy recipes and I don’t mind to cheat if the end result is awesome. No doubt, your cookie dough ice cream sandwiches would be the star in my house. I ll give it to try to the fussy mister, I bet he will enjoy it!
Kim Beaulieu says
Thanks Helene. I love cheating in summer. It’s so hot here I can’t think straight most days. So cutting corners and shoving food in pie hole easily makes me happy. lol
[email protected] says
Sounds like a fun recipe! We just kick the AC into a higher gear when we bake in the summer, so the kitchen stays cool. 😉 But the cheater version is terrific when you absolutely have to have cookie dough ice cream sandwiches right now, and can’t wait to bake cookies. Or even mix the cookie dough! Good stuff – thanks.
Kim Beaulieu says
Our a/c is so horrible. We need a new one. Even if I don’t bake it get over 85 degrees in here, even when it’s set to 73/74. It’s sad. I loved my old house cuz our a/c was amazing. I baked all summer. Lol.
These made me happy. I think the key is trying to find egg free dough. Which is difficult. I’m a raw egg worry wart.
Susan says
I forgive you for cheating with the cookies because sometimes we need to cheat a little and you made cookies dough ice cream sandwiches and I want one!
Kim Beaulieu says
Thanks so much Susan. I love these way too much.
Colette says
Kimmy’s belly is happy, happy, happy!

This is like one-stop shop…cookies AND ice cream in one bite. Yes, please!
Kim Beaulieu says
I love my job. It’s delightful.
Ashley Bee (Quarter Life Crisis Cuisine) says
The cookie sandwiches look amazing but–I moreso am admiring your background. Is it a fancy kitchen corner or a background of some sort?
Kim Beaulieu says
That’s actually tile. It’s our flooring through our entire upstairs, even bedrooms, the bathroom and living room. We had some extra so you see those ones in almost all my photos. I need to go buy more. Lol. I believe their porcelain tiles. I want to hit up a tile store and see if they have some cast offs or broken ones they’d give up.
Jocelyn @BruCrew Life says
Yum, yum, and more yum! Cookies and ice cream is definitely the way to go…especially with cookie dough in it!

Emily @ Life on Food says

Kim Beaulieu says
I know right. Best way to eat them. Ha.
Kate | Food Babbles says
I always appreciate a good shortcut and all the cheating here certainly looks scrumptious!! I don’t feel cheated at all. In fact, I feel like I want to lick my screen right now. But that would probably be in bad form and my co-workers would look at me strangely. Plan B: Make these at home ASAP!
Kim Beaulieu says
I say next time you lick it and see how they react. Ha. Love it. Thanks Kate.
Joanne T Ferguson says
G’day Kim! LOVE these sandwiches, true!
Is still very cold and winter here, but could go for a taste of everyone’s recipes submitted too!
Cheers! Joanne

I’m hiding my computer screen right now so Bobby won’t see this. His favorite ice cream treat is the ice cream sandwich. He would LOVE these and of course – so would I!
Kim Beaulieu says
Ha, I love that. I can just see him peeking around your trying to hide it. lol
Laura says
Drool. Serious drool. 🙂

Whoa, that dripping ice cream is calling my name. Now I know what to do with my leftover cookie dough ice cream 🙂
Kim Beaulieu says
Mine too. I might have to arm wrestle you for it. I think you’d likely win though. I’ve seen your guns. xx
Erin @ The Spiffy Cookie says
Cookie dough ice cream inside of cookies? Yes please!
Kim Beaulieu says
So good.
Becca from It's Yummi! says
Kim, you sure know how to help a girl with a carb craving! 🙂
I’ve never made ice cream this way before. When I’m whipping the cream with the milk and sugar, do I want it whipped to the point where it’s no longer a liquid and it’s a whipped cream consistency?
Kim Beaulieu says
Yeppers, whip till it’s thick. Start with whole milk and sugar. Let the sugar dissolve. Then add heavy cream. Works like a charm and no eggs or turning on the stove to heat the house up. It’s heaven.
Pamela @ Brooklyn Farm Girl says
So these are 100% going to be entering my life very soon, I can’t wait!
Kim Beaulieu says
You will love them.
Elizabeth @ SugarHero.com says
Whatchoo say about my gramma?!
Heck, I’m not mad, these definitely look slap-worthy. Love it!

Roflmao! I knew there was a reason I adore you so much. Another silly sense of humour, sugar loving gal. So happy you hopped on the ice cream train.
Charlie says

Dionne Baldwin says
When I first started driving I discovered the freezer full of ice cream bars and I fell head over heels with the ice cream sandwich made with two giant cookies! That was back when they tasted good. I would LOVE to have these! I should give this a try before the cold and the rains set in next month!
Kim Beaulieu says
Old school ice cream is always the best. I think that’s why I like making my own so much. It tastes like when I was younger. I dread rain. And cold. And winter in general. I need to move to Hawaii before November. Lol.
Ramona W says
I would totally act like the cookie monster for these. 🙂 I love that first photo with the ice cream dripping a bit… I so wanted to pick it up and lick it. 🙂 YUM!
Kim Beaulieu says
Me too. In fact I pretty much did. That photo just makes me happy. Thanks so much Ramona.
