This is a sponsored post for Tyson Foods, Inc. and Pinnacle Foods Group LLC. All opinions are my own, as always. Thanks to all the companies, and readers, who help support Cravings of a Lunatic.

My family and friends will tell you I am super picky about vegetables. I'm not a gal who digs a plain, cold salad for lunch. That doesn't mean I don't like vegetables, or salads. What it means is I prefer mine hot. I'm not sure why, it's just something I've learned to roll with over time. I tend to feel the same way about sandwiches. There's something about hot food that feels more like a meal to me.

That said, not all meals need to be heavy and make you feel like you want to take a nap for the rest of the day. Light options that still contain protein are where it's it for me. Give me hot veggies mixed with hot chicken and I'm one happy girl. I can eat recipes like that all day long. Whether it's lunch or dinner, recipes that pair healthy hot vegetables with scrumptious chicken are something I can sink my teeth into over and over again.

I wanted to come up with a recipe that paired Wish-Bone® Italian Dressing and Tyson® Grilled & Ready® Chicken in a quick and easy way. That wasn't enough for me though. I wanted it to be a recipe people could turn into an entire meal for their whole family. I also wanted it to be something people could customize to their own taste. Something people could divide for meal prep, or send in their kid's lunches, or their own lunch for that matter.

Any time I'm in need of fabulous ingredients for a recipe I'm working on I head to Walmart. It's a great place to shop for groceries and fresh produce. Friendly staff, and all the things I need in one place, that makes this busy mom super happy. I can grab my groceries plus pick up anything else the family needs at any given time. I picked up my supplies and about a thousand other things, and headed home to whip up something delicious.

I thought about going the traditional chicken over a salad route, but my belly had other ideas. My cravings lead me to mixing up a recipe with some Asian flair. I'm not sure if you know this but Wish-Bone® Italian Dressing works great for marinating and cooking. It's great for cold salads, and it also rocks in hot ones as well. I use it instead of olive oil in a lot of recipes. Since the Tyson® Grilled & Ready® Chicken just needs to be warmed up the dressing works perfectly.

What I LOVE about this recipe is how adaptable it is. You can scoop the chicken teriyaki over rice, noodles or salad. You could spiralize some healthy veggies and scoop it over those. You can eat it solo too. This recipe is super easy to put your own spin on. We eat ours over rice, but my daughter loves her bowls with noodles. That's the beauty of a recipe like this one. It lends itself perfectly to customization. That's a beautiful thing.

I use black sesame seeds over mine, but if you don't have them you can use regular sesame seeds. You can also just leave them off if you don't like sesame seeds, or can't eat seeds because of your diet. There's no right or wrong way to dress this up.

For this recipe I used store bought Teriyaki Sauce but you can make your own if you like. It's actually super easy to do but for the purpose of keeping this recipe as simple as possible I decided to opt for store bought this time. You can substitute Tamari Sauce if you prefer it, Hoisin Sauce would work as well. Use what you love, that's the key to being happy if you ask me.

One trick we've learned over the years is to whip up a big batch of rice at the beginning of the week. Pop that rice in the fridge and you've got the base for TONS of healthy and yummy recipes for the week. It saves time and you'll be so thankful you prepped it every week. I've been doing this for over 20 years and I've never wasted one grain of rice. There's always something you can whip up quickly if you've got some Tyson® Grilled & Ready® Chicken and Wish-Bone® Italian Dressing on hand to pair with the rice.

Give this recipe a try! I think you will love this fresh take on chicken salad. It's hot, a bit spicy, loaded with vegetables, and your taste buds will thank you. Your family will be begging you for seconds, I promise you that. The side perk of this one is it's healthy so it's easy on the waistline too. So you can eat dessert the day you make this. See, I'm a genius. Healthy lunch or dinner means dessert is on the menu. That's a huge perk if you ask me. Enjoy!

    Ingredients

    • 1 package Tyson® Grilled & Ready® Chicken 2.2 oz/1.37 lb/623 g
    • ½ cup Wish-Bone® Italian Dressing divided
    • ½ cup Teriyaki Sauce divided
    • 2 cups broccoli florets
    • 1½ cups carrots grated into thin strips
    • 2 teaspoons sesame seeds
    • 3 cups prepared rice

    Instructions

    • Cut chicken into bite size pieces if desired. Place a wok, or pan, on the stove top and add ¼ cup Wish-Bone® Italian Dressing to it. Turn the heat to medium and bring the dressing to a bubble, then add the chicken. Cook just until the chicken warms up and starts to crisp on the edges. Toss in ¼ cup of Teriyaki Sauce. Cook while stirring until the chicken is coated completely. Scoop out and place in a large bowl.
    • In the same wok, or pan, add another ¼ cup Wish-Bone® Italian Dressing, toss the veggies in the pan and cook for about 7 to 10 minutes, or until desired doneness. Remove and place in a clean bowl, off to one side of it.
    • Pour the remaining ¼ cup of Teriyaki Sauce in the pan and cook for about 1 minute, just long enough to warm it up. Toss the chicken back in for 1 to 2 minutes, just long enough to warm it up. Scoop the chicken into the bowl you put the veggies in, off to the other side. Toss sesame seeds over top.
    • Scoop the Teriyaki Chicken over warm prepared rice, if desired. You can substitute noodles or salad if you like. We love ours over rice, or plain.
    • Serve with a big old Chicken Teriyaki loving smile!

These bowls are beautiful with the color from the broccoli and carrots. The chicken looks delicious too. I would be happy with this for dinner.

My kids love, love chicken teriyaki! I love how colorful and enticing your bowls are (and the actual bowls are just so pretty, Kim!!). I have to check out Tyson's chicken. I have never seen it before at my market. It is so nice to have it ready to go to add to something wonderful like this on a hectic school night and to have it be something my kids would devour in minutes!

This dish was a hit at dinner! I added half a teaspoon of ground ginger, 2 minced garlic cloves, and 1/2 cup apple cider vinegar to the recipe. Turned out fantastic!

      The first ingredient says " 1 package Tyson® Grilled & Ready® Chicken 2.2 oz/1.37 lb/623 g" -- is that supposed to be 22 ounces (not 2.2)? 🙂

The recipe looks GREAT but I don't see the number of servings anywhere? I always want accurate nutritional info and it's impossible to get without knowing how many servings are in a recipe. (If that info is there and I just missed it, which is always possible, I apologize! 🙂 )

Hi Karen. It should actually say 22 but some of my recipes did not convert info correctly when I switched recipe plugins. I'll try to fix it this weekend. Thanks for the heads up.

Servings with this one is tricky. It depends if you use rice or just eat the protein. If you use the rice too it should serve about 6.

I'll be adding nutritional information to ALL my recipes over the next few months. There are over 1000+ so it will likely take 3 to 6 months. I'm hoping I can make it happen as quickly as possible so it helps those of you who appreciate having it.
