DB is The Foodie Stuntman, he makes dishes that are challenging and often use methods that are on the tricky side. He pushes culinary boundaries and steps outside the norm. It's an impressive thing to do. Food that is cooked with care, and technique. It's a beautiful thing! DB whips up dishes like Spinach and Ricotta Gnocchi with Fontina Fonduta, Steak Fajitas, Chocolate Espresso Gelato, Coq Au Vin, and my personal fave Bucatini all 'Amatriciana. DB is an incredibly supportive and kind blogger. He is also extremely helpful in the group we belong to, Food Bloggers Network, always available to offer advice or feedback. He is a joy to know and I'm proud to count him among my foodie friends. Please welcome DB to the asylum.

Hi everyone, I'm DB, The Foodie Stuntman, and I write Crazy Foodie Stunts where I make food from scratch that is often taken for granted and can easily be bought at any supermarket, uncommon cooking methods and dishes with challenging preparation for someone with no formal culinary training.
Primarily I do this because, in my experience, I have noticed that homemade food is better than store bought (with very few exceptions). I've also noticed that homemade is better than a lot of restaurant food (unless you're willing to spend your whole paycheck on one dinner) because you can make your dish to suit your own personal tastes. I also love a challenge. In the past few months, I've deep fried my own potato chips, made ricotta from scratch and made a gelato without an ice cream maker. Quick and easy is just not my style.
In the last couple of months, I've also noticed some of the more popular posts Kim Bee has published have been made with breakfast cereal, so I used this for some inspiration. I think this is a great concept because the novelty of creating something from scratch is present, but easy enough to recreate yourself. For this specific recipe, I've adapted Alton Brown's recipe for homemade granola I found on foodnetwork.com.
Ingredients
- 3 cups rolled oats
- 1 cup slivered almonds
- 1 cup cashews
- ¾ cup shredded sweet coconut
- ¼ cup plus 2 tablespoons dark brown sugar
- ¼ cup plus 2 tablespoons maple syrup
- ¼ cup vegetable oil
- ¾ teaspoon salt
- 1 cup raisins or any other dried fruit
Instructions
- Preheat the oven to 250° Fahrenheit. In a large bowl, combine the dry ingredients: oats, almonds, cashews, coconut and brown sugar. Add in the vegetable oil, salt and maple syrup and stir to combine.
- Pour the mixture onto a sheet pan (two if it doesn't fit on one) and place in the oven for 1 hour and 15 minutes, but stirring every 15 minutes to brown evenly.
- Remove from oven and place mixture into a large bowl. Add the raisins and toss to combine.
- Note: I only baked my granola for 60 minutes because the granola was already very brown.

Today we are leaving the fine province of Alberta. We are also leaving my son behind. Probably going to be the most difficult but proud day of my life. I imagine I'll be a puddle saying goodbye. I'm so glad I was able to do this trip with the kids and have some quality with them. Knowing he's all set up in his apartment and able to make his own start in life gives me peace of mind. I know he will do great out on his own. He's beginning a new phase of his life. Starting out on your own is an amazing adventure. He's going to have the time of his life.

I'm sitting here reading your post and feeling like a total idiot. In my last location, I could get my favorite breakfast granola but, now, in Cairo, it isn't available. It never occurred to me that I could make my own. I don't know why not! And now I have a lovely recipe that reminds me of my favorite! Thanks for this, DB!

I have made this granola , it's great. What like most is you don't have to buy a bunch of stuff you'll never use again. Made triple batches this year and used them as Christmas gifts. Everyone loved it!!!!
