Hi folks. I have to make this snappy. I have a hair appointment today and as usual I am running behind. I wanted to hop on here quick and share this with you all. It’s just an easy, quick, inexpensive meal. This was what happened the night I didn’t feel like cooking, and was the day before grocery day. I just scrounged around and threw everything but the kitchen sink in there. Turned out great. Hope you enjoy. I shall return later, no longer like a skunk in reverse. I will again be my gorgeous blond self. Wish I could get my hair done every day. It’s so nice to get pampered and feel good. I mean I am smoking hot anyway, this just amps it up a bit. *falls down laughing*
I’ll let you guys know how our visit with my brother went tonight in another post. But long story short we had a blast, ate a ton of take out and laughed like lunatics.
1 large (28 oz) can of whole, peeled tomatoes
1 cup pasta sauce
1 cup Parmesan cheese
1 heaping tablespoon basil
1 heaping tablespoon oregano
1 teaspoon garlic powder
1 teaspoon chili powder
Dash of salt
2 tablespoons garlic paste (optional)
1 heaping tablespoon minced garlic (optional)
1/2 white onion, diced
1 1/2 pounds ground beef
2 boxes of rigatoni noodles
1 1/2 cups mozzarella cheese, grated
Brown your ground beef and diced onion in skillet.
Turn on water for your noodles.
Preheat your oven to 350 degrees.
Put your whole peeled tomatoes in your food processor and pulse until liquid. Add you pasta sauce, parmesan and spices right in it and mix. Set aside.
Grate your cheese while hamburger cooks and water comes to a boil.
Once meat is cooked add your tomato mixture and bring to a boil, then reduce to simmer.
Once your water boils add your noodles and cook until firm but not mushy.
Drain your noodles.
Line a couple of casserole dishes with parchment. (helps to wet it to fit in corners better)
Add your noodles to casserole pans.
Pour your sauce over each one and stir lightly.
Sprinkle your mozzarella over top.
Put in oven for about 15 to 20 minutes. Cheese should be melted and noodles not over browned.
Remove from oven.
Serve with a smile.
*note*- this yields 2 large casseroles so you could freeze one. Or cut the recipe in half.
Good gooey sticky meal. So fab, really loved it even though it started as one of those I have no idea what I’m making meals. Enjoy. Have a fantastic day. Will be my usual friday post later tonight. Cya all then.
