These Shallot Rings are such a fun side dish recipe. They are tiny but packed with flavour and super easy to make. They are life changing spheres of happiness!

I'm going to be brutally honest with you. As always.
I thought I invented these when I made them. Honestly, I thought I had a genius idea that no one else had ever thought of.
A few days after I made them I googled them just to be sure. I mean you don't go declaring yourself a genius without making sure it's true. Sadly I did not invent them. Other people have made them. I almost cried.
Then, I made more Shallot Rings, shrugged and moved on with my day. It's what I do.
I mean, what I do when I'm not shoving Shallot Rings in my piehole.
Seriously man, I don't care who invented these bad boys. I'm just happy the idea popped into my own head so I could become addicted to them. They are incredible.
I don't know about you but I am one serious shallot fan. In all honesty, I like them better than onions.
I use them in so many dishes and any excuse to make something with them is a good day in my book. I can't get enough shallots in my life. Now I get to make Shallot Rings any time I feel like it. Life is good. So are shallot rings.
Sorry, generally I hate shots with my fingers in there but I just had to show you the inside of these things. So good. Honestly you are going to fall in love with these things. I know I did.

Shallot Rings
Ingredients
- 10 shallots sliced like onion rings
- Canola oil for frying
Instructions
- Turn on your deep fryer, or pour some oil in a large dutch oven and use a thermometer to monitor the temperature on the stove stop, bring it to about 375 degrees F.
- Slice your shallots like you would onion rings. You want circles similar to an onion ring. It's okay if some are bigger or smaller. It's all good.
- In one bowl combine the flour, salt and pepper. Mix and set aside.
- In another large bowl combine the pancake mix, salt, and pepper with fizzy water. Whisk briefly till smooth, but still the odd lump.
- Now dunk the shallot in the flour mixture first, then immediately dunk it in the pancake batter, then drop in the hot oil. Cook for a few minutes until they turn golden brown. This will take a few minutes, probably 5 or 6. Do in small batches so they don't stick together.
- Remove from the oil with a spider tool and place them on a paper towel lined plate to drain off excess fat.
- You can sprinkle with more salt and pepper if you like. I don't care for it much, it's a personal choice.
- Serve with a big old genius shallot ring smile!

I love shallots too.... ditch the batter and just fry them up til nice and crisp and "frizzled" .... place on roast beef sandwich, use in place of the "French-fried onions" on top of green bean casserole or on top of baked scalloped potatoes...... You're Welcome...

I'm working on an air fryer recipe for fried shallots. Had good results with air fryer onion rings so it should work. The ones you made look fantastic.

I had balsamic candied onions on a burger in Kingston called Harper's this summer. Life changing! I'm going to try doing that to shallots after the holidays.
