Chicken and Strawberry Salad with Strawberry Dressing & Walnuts #flavorsofsummer
An easy to make chicken salad recipe tossed strawberries, strawberry dressing and walnuts. Perfect for a picnic or potluck!

For the Chicken:
- 3 pieces of boneless skinless chicken breast, cut into cubes
- 2 tablespoons of olive oil more if needed
- 2 tablespoons Stir fry Sauce I used a General Tao Sauce
- Salt and Pepper if desired
For the Salad:
- 1 package of Baby Romaine Mix 142 g/5 oz size
- 2 cups strawberries hulled and sliced
- ½ cup of walnuts chopped
For the Strawberry Dressing:
- 2 cups strawberries tops cut off
- 2 tablespoons walnut oil use olive if you don't have walnut
- 2 tablespoons honey
- 1 tablespoon orange juice
For the Chicken:
In a frying pan, or wok, swirl the oil into the pan over medium heat. Let it start to glisten a bit.
Toss in the chicken and cook for about 4 to 5 minutes, or until the chicken is starting to turn brown slightly.
Add the stir fry sauce and cook for about another 1 to 2 minutes, stirring to evenly coat the chicken and brown it evenly as well. If you need to hit it with a bit more olive oil that's okay.
Add salt and pepper to taste.
Remove from heat and set aside.
For the Salad:
Clean and dry your greens.
Toss them a large bowl with strawberries you've washed, hulled and sliced.
Add the walnuts.
For the Strawberry Dressing:
In a food processor combine the strawberries, walnut oil, honey and orange juice. Give it a whir until it becomes liquid. If you want to hit it with salt or pepper you can, I prefer it with no additions of seasoning personally.
Putting it all together:
Give your salad a nice toss.
Add the chicken.
Toss again.
Plate it or put it in mason jars for a picnic.
Don't hit it with dressing until you're ready to serve it.
You can eat right away, or pop them in the fridge for later. Or pop them in a picnic basket for a fun family outing
Once ready to serve hit it with the dressing.
Serve with a big old summery berry smile!
You can omit the chicken for a nice meatless monday option!
You can substitute beef if you like!
You can add blueberries! I did that last week and it was divine!
You can use lemons or limes for that hit of acidity in your dressing. I just tend to reach for oranges when making some dressings. I also use oranges to macerate fruit. So it tends to be my first choice for a hit of acid.
