Cajun Crab: Guest Post by Rants from My Crazy Kitchen #SeafoodWeek

Flavourful but simple spicy and buttery crab perfect for a special occasion dinner!

Ingredients

  • 16 ounces refrigerated crab meat drained, flaked, and picked through for shell fragments
  • ½ cup one stick unsalted butter
  • ¼ cup vegetable broth or chicken broth
  • ½ tablespoon corn starch
  • 1 teaspoon chili powder
  • ½ teaspoon lemon juice
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon black pepper
  • 1 scallion green part only, thinly sliced
  • 2 tablespoon thinly shredded Parmesan cheese

Instructions

  • Preheat oven to 350 degrees F.
  • Melt the butter in a small pot over low heat. Remove from the heat and stir in the chili powder, garlic powder, cayenne pepper, black pepper, and lemon juice. In a measuring cup whisk together the vegetable juice and corn starch. Add the broth mixture to the butter mixture and whisk for one minute. Fold in the flaked crab meat, mix well, then divide the mixture between two serving size casserole dishes and place on a baking sheet. Sprinkle with sliced scallions and Parmesan cheese.
  • Bake in the preheated oven for 20 minutes, or until heated through.
