Mini Fruit Pizzas

Simple to make fruit pizzas using pizza dough, cream cheese and fresh fruit. Perfect for popping in the kids' lunch boxes this fall!

Ingredients

  • 1 store bough or homemade pizza dough preferably thin crust (use whole wheat if you can)
  • 1 package of cream cheese softened, use Horizon Organic preferably
  • Various fruit blueberries, blackberries, bananas, strawberries, raspberries, kiwi, or any other fruit your kids' dig
  • Honey or agave optional

Instructions

  • Preheat oven to 400 degrees F.
  • Roll out your dough so it's thin enough for a thin crust pizza.
  • Use a biscuit cutter or cookie cutter to cut small rounds out of the dough. Place those on the cookie sheet, making sure to space them out a bit.
  • Place in the oven and bake for about 5 to 6 minutes, depending on size of your pieces.
  • Remove from oven and allow to cool completely.
  • Pop your cream cheese in a stand mixer and whisk until it's soft and fluffy so it's easier to spread. You can add a touch of honey or agave if you like, it's totally optional.
  • Spread the cream cheese on the pizza rounds evenly.
  • Slice up your fruit and place on top.
  • Serve with a big old fruit pizza loving smile!

Notes

You can mix these up any way you like. Use whatever kind of fruit your kids' prefer. You can make them healthier by using whole wheat pizza dough.
