Easy Granola Cups with Berries

  • Preheat oven to 350 degrees F.
  • Spray a mini muffin tin with non-stick spray. Set aside.
  • Pulse granola in a food processor until it resembles fine crumbs. Transfer to a medium size bowl. Add melted butter, honey, coconut flakes, and vanilla. Stir until well combined.
  • Press the mixture into the mini muffin tins. Tamp down with the blunt end of a honey dripper or any kitchen tool making a well in the middle.
  • Place in preheated oven and cook for about 6 to 8 minutes. You want the cups to turn a light golden colour. Remove from oven. Tamp down the middle again if needed. Allow to cool slightly. Remove use a butter knife or thin offset spatula. Place on a plate or cooling rack.
  • Once cooled fill the cups with vanilla bean yogurt.
  • Top with berries.
  • Serve with a big old breakfast loving smile!
