Cinnamon Pecans

Pecans coated with sugar and cinnamon, then toasted in the oven to perfection. Eat your fill, but don't look at the flowers.

Ingredients
  • 1/2 cup 1 stick butter, melted
  • 2 large egg whites
  • 1 cup sugar
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 4 cups pecan halves
Instructions
  1. Preheat oven to 300 degrees F.
  2. Line a rimmed cookie sheet with parchment paper.
  3. Melt butter and pour on pan. Spread out with a pastry brush or offset spatula.
  4. In a mixing bowl beat eggs (a mixer works beautifully) with a whisk until they become foamy. Add sugar, cinnamon, and salt, mix until well combined.
  5. Toss pecans in the mixture and mix until well coated. Pour onto cookie sheet and spread out evenly.
  6. Place in the preheated 300 degree F oven and bake for 25 minutes, making sure to mix them periodically. My recommendation for making sure they cook perfectly is to use this schedule:
  7. Place in oven and bake for 10 minutes!
  8. Remove briefly from the oven, stir them really well, place back in oven and bake for 8 minutes!
  9. Remove from the oven, stir them really well, place back in oven and bake for 7 minutes!
  10. Remove from oven, stir and allow to cool!
  11. I've made them several times at different temperatures and cooking times and the 300 degree F oven and baking for 10, then 8, then 7 minutes worked perfectly.
  12. Cool for 15 minutes.
  13. Serve with a big old cinnamon pecan loving smile and some yellow flowers!
