Mini Taco Pizza Bite

These Mini Taco Pizzas are perfect to serve for lunch, dinner or as a snack. They also make great appetizers for parties.

Ingredients

  • 1 package Pillsbury french bread
  • 1 cup prepared pizza sauce
  • 2 cups cheddar cheese
  • 1 cup prepared and seasoned taco meat

Optional Toppings:

  • Tomatoes diced
  • Shallot sliced thinly
  • Onion sliced thinly
  • Peppers sliced thinly
  • Lettuce shredded
  • Salsa any kind you prefer
  • Sour cream to taste

Instructions

  • Preheat the oven to 350 degrees F.
  • Spray two muffin tins with non-stick cooking spray. Set aside.
  • Pop the package for the french bread. Lay it on a cutting board but don't roll it out. Leave it intact and then cut slices off it, sort of like slicing cookie dough. You should be able to slice off 18 to 24 pieces.
  • Place one piece of french bread dough in each muffin tin well. It helps to take your palm and flatten the dough a bit.
  • Spread a little pizza sauce on each one, to taste.
  • Sprinkle the cheddar cheese over each one.
  • Spoon on the taco meat over each one evenly.
  • Place in the preheated oven and cook for about 8 to 10 minutes.
  • Remove from oven and use a spoon or knife to help remove the pizzas.
  • Top each with whatever toppings you dig.
  • Serve with a big old back to school smile!
