Buddy the Elf Cookies

  • Line a cookie sheet with parchment paper. Set aside.
  • Dump the chow mein noodles into a large bowl. Set aside.
  • Melt the white chocolate in a double boiler by filling the bottom pot ½ way with water, bring to a boil then reduce heat. Place top pot or heat proof bowl over top and toss the white chocolate inside. Melt the chocolate, while stirring it consistently, until it's smooth. Remove the pot from the heat.
    Remember that white chocolate burns easily, especially if you use white chocolate chips. You can add a little oil or shortening to the white chocolate if it isn't loosen up enough. Honestly, I prefer the white baking chocolate and NOT white chocolate chips.
  • Toss half of the mini marshmallows into the white chocolate and mix until mostly smooth.
  • Pour the mixture over the chow mein noodles and mix until well combined.
  • Scoop the cookies out and drop them on the parchment lined cookie sheet so they resemble haystack cookies.
  • Immediately melt the small amount of milk chocolate in the microwave in a heat proof bowl. It should only take about 30 to 60 seconds for that small amount.
  • Drizzle with maple syrup, chocolate syrup and melted chocolate.
  • Toss M&Ms, remaining marshmallows and pop tart over cookies.
  • Let the cookies cool so the chocolate sets up.
  • Store for later or serve immediately!

Notes

Nutritional information is not exact. Pop Tarts cannot be entered so I used cocoa pebbles cereal as a substitute to calculate the information. Just wanted to clarify that. 
I didn't use sprinkles on mine but I likely would next time I make them. It was hectic in our household the day I made these and I literally forgot to add them. Just keeping it real!
