Total Time30 minutes
Servings: 1 cup of Meyer Lemon Salt

Ingredients

  • 1 cup of salt use whatever kind you prefer whether it be kosher, table or sea salt
  • Zest from 3 to 4 Meyer Lemons depending on size of them (wash your lemons first people!)

Instructions

  • Preheat you oven to a very low temperature, I set mine to 200 degrees F.
  • Wash your lemons and dry them off.
  • Zest them.
  • Spread the lemon zest onto a parchment lined cookie sheet. Make sure it's as evenly spread as possible.
  • Place in your preheated oven and cook for about 15 to 20 minutes.
  • Remove and allow to cool.
  • Now in a food processor add your zest and salt, pulse for about 30 to 60 seconds or so.
  • Place salt in spice jars.
  • Hoard them all for yourself, or give a few away to close friends.
  • Enjoy the Meyer Lemon Salt on fish, seafood, fries, salads and even use when baking with lemons.

Notes

You can dress this up with other herbs. I'll be sharing another one with you later this week.
You can double batch this recipe which is what I do. I like to give some away as gifts.
You can use regular lemons is Meyer Lemons are not available.
