Peanut Butter Krispies

A fun twist on krispie treats using Reese’s Puffs with a Nutella Ganache layer, a Peanut Butter Ganache layer and topped with Reese’s Pieces.

Ingredients

For the Krispie Layer:

  • 1 kg bag of mini marshmallows
  • 6 tablespoons butter
  • 1 box 1 lb, 6.9 oz of Reese’s Puffs cereal

For the Peanut Butter Ganache Layer:

  • ½ cup heavy cream
  • 1 cup of peanut butter
  • 1 cup of chocolate chips
  • 2 tablespoons of corn syrup

For the Nutella Ganache Layer:

  • 1 cup heavy cream
  • 1 cup of Nutella
  • ½ cup of chocolate chips
  • 2 tablespoons of corn syrup

For the Topping:

  • 1 cup of Reese’s Pieces

Instructions

  • I made a HUGE batch. So I did one 9 x 13 pan with plain krispies. Then another 9 x 13 pan with krispies topped with double ganache. You could half the recipe if you like. Or feed an army!
  • Line both 9 x 13 inch pans with parchment paper, or use non stick spray like there is no tomorrow!

For the Krispie Layer:

  • In a HUGE bowl (or 2 VERY large bowls) combine the butter and marshmallows. Microwave for about 5 to 6 minutes making sure to check and stir every minute for the first 3, and every 30 seconds for the last 3 minutes. All of a sudden they are going to look like they want to implode, that means they are done. Take them out and stir them really well to combine the butter and marshmallows.
  • Now spray a large roasting pan with non stick spray as well as a wooden spoon. Dump your cereal and marshmallow mixture in the roasting pan and start mixing until it comes together.
  • Pour ½ into one pan, the other ½ in the other pan. Smooth out by spraying the back of a spoon with non stick spray. Press firmly down and smoosh it in there. Technical I know!
  • Now set aside.

For the Peanut Butter Ganache Layer:

  • In a small saucepan, scald you cream. You want it to just start to bubble.
  • Put your peanut butter and chocolate chips in a heat proof bowl and pour the hot cream over top. Whisk like your life depends on it. It will look weird and gloppy but don’t fret, it will come together. It just takes a good whisk. Once it’s smooth add your corn syrup and whisk till combined. Pour over 1 batch of the krispies. Pop it in the fridge to set up while you do the next step.

For the Nutella Ganache Layer:

  • Scald your cream in a saucepan. You want it to just start to bubble but no burn.
  • Put your Nutella and chocolate chips in a heat proof bowl and pour the hot cream over top.
  • Whisk like your life depends on it again. It will look weird and gloppy but it’s okay, it just takes a few minutes of whisking to come together. Add your corn syrup and whisk again until combined. Pour over top of the peanut butter ganache layer. Pop in the fridge to let it set up.

For the Topping:

  • Once the other layers have cooled you can add your reese’s pieces. Just press them in randomly along the top.
  • Cut into squares.
  • Serve with a big old peanut buttery smile!

I had kids coming over so I went spastic on the marshmallows. Personally I like mine less marshmallowy but it’s all about finding your own marshmallow happiness threshold. You decide how many marshmallows gets you to your happy place!
Non stick spray is your best friend while making these. Spray everything with it. The pan, the bowls, the spoons, your hands, the pets…. whatever walks by and gets a whack of spray as they pass through.
Yes you can do this with ANY cereal!
