Apple Hand Pies

Cute little Apple Hand Pies that are easy to make and wicked adorable!
  • 4 tablespoons of butter divided
  • 4 cups of apples diced or cut into small chunks
  • 1 cup white granulated sugar
  • 1 cup brown sugar
  • Pinch of salt
  • Juice from 1/2 lemon
  • Roasted Saigon Cinnamon to taste I used about 1 teaspoon
  • Nutmeg to taste I used about 1/2 teaspoon
  • 1 to 2 teaspoons corn starch for thickening
  • 1 package of store bought pie dough comes with two rounds or homemade pie dough
  • Demerara sugar for finishing if desired
  1. Preheat your oven to 375 degrees F.
  2. Line two cookie sheets with parchment, set aside.
  3. In a large pan over medium heat add the butter, let it start to melt a bit. Then toss in your apples, both sugars, lemon juice and salt. Cook this for about 5 to 7 minutes, until the apples soften and the mixture starts to brown up a bit.Add your cinnamon and nutmeg.
  4. If it's overly watery (depends on the kind of apples you used) you can drain off some excess liquid. If there's only a little bit of juice add about 1 teaspoon of corn starch and allow that to cook for a minute or two to thicken it up. You can add more if needed.
  5. Take off the heat and allow to stand till needed.
  6. On a lightly floured surface, roll out your pie dough. I used cookie cutters to cut out my shapes. Cut two for each pie. Depending on your cutter size it should make 8 to 12 pies. Remember to cut double so you have a top and bottom piece. If you have a mini cutter you can cut a fun shape in for steam.
  7. Place the bottom layers on the cookie sheet.
  8. Now spoon about 1 tablespoon of the fried apples into each pie shape. Keep it sort of in the middle so you don't have pie mixture around the edge, that needs to be clean to pinch the pies.
  9. Now take the top layers and pop them over each shape.
  10. With your fingers press down around the edges of all the pies. For good measure go around them with a fork dipped in a touch of flour or water.
  11. Now melt the remaining 2 tablespoons of butter in a saucepan.
  12. Brush that butter over top of each pie shape.
  13. Sprinkle some demerara sugar over top.
  14. Pop in the oven for about 12 to 15 depending on the size of the cookie cutter you used to cut out your shapes. Start keeping an eye around 8 minutes in case yours in way smaller than mine was.
  15. Remove from the oven.
  16. If desired you can sprinkle them with powdered sugar.
  17. Serve with a big old apple pie loving smile!
