Vegan Sloppy Black-Eyed Peas

Sloppy Black Eyed Peas are perfect for lunch or dinner. It's a great twist on a classic for a healthier, meat-free Sloppy Joe recipe.

Ingredients

For the Morning Ingredients:

  • 2 cups water
  • cup dry black-eyed peas
  • cup carrots chopped
  • cup millet
  • 2 tablespoons bell pepper minced
  • 1 clove garlic minced
  • 1 teaspoon Cajun seasoning
  • teaspoon liquid smoke to taste

For the Evening Ingredients:

  • 1 cup greens (collard, kale, etc) minced
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • ½ teaspoon white pepper
  • 1 package buns for serving (GF)

Instructions

In the Morning:

  • Add all of the morning ingredients to the slow cooker. Cook on low setting for about 7 to 9 hours.

In the Evening:

  • About 30 minutes before you wish to serve this you need to add the greens and tomato paste. Cover and allow to cook for the remaining 30 minutes. (I left mine on for about an hour as I was multi-tasking)
  • Right before serving add the salt and pepper, along with more cajun seasoning if desired.
  • Pile the sloppy mixture on your buns.
  • Serve with a big old happy and sloppy smile!
