These no bake cookies and cream cheesecakes are so quick and easy to make. If you love Oreo cheesecake, this recipe is for you!
- 1 cup oreo crumbs
- 3 tbsp butter melted
- 8 oz cream cheese softened
- 1 cup heavy cream
- ½ cup confectioner's sugar
- 12 regular sized Oreo cookies crushed
- 12 mini oreo cookies for garnish
Melt your butter in the microwave. It only takes a short time for 3 tablespoons, maybe 20 seconds or so.
In small bowl combine the oreo crumbs and butter. Mix. Press into whatever dishes you would like to use. You can use cheesecake pans or jars, or little cups like I did. The easiest way to tamp down the crumbs is to use the flat end of honey dipper if you have one. Works like magic.
In a mixer combine the heavy cream and confectioner's sugar. Whip until fluffy.
Add the cream cheese and whip until well combined and fluffy.
Add the crushed oreo cookies and whip briefly to mix them up.
Scoop the filling into the cups over top of the crust. You could also pipe it if you want it to look perfect.
Pop in the fridge to set for an hour. The longer it sets the more firm it becomes. I usually can't wait long to dig in.
Place a mini oreo cookie on the top of each.
Serve with a big old "I love cookies n cream" smile!
