Easy Mini Meyer Lemon Tiramisu
Easy recipe to make a light, fluffy dessert that will wow your guests.

Servings: 4 Mini Trifle Bowls
For the Base Layer:
- 8 ladyfinger cookies broken into pieces
- ½ cup Meyer Lemon juice
- 1 tablespoon sugar
For the Lemon Layer:
- ½ brick of cream cheese 4 oz, softened
- 4 cups of cool whip
- 1 teaspoon lemon extract use lemon juice if you don't have extract
For the Base Layer:
Break cookies into pieces and lay in bottoms of mini trifle bowls.
In a small bowl combine the meyer lemon juice and sugar, mix until sugar dissolves. Pour over top of the cookies in the trifles bowls.
For the Lemon Layer:
Mix the ingredients in a stand mixer, or hand mixer and bowl, until well combined and fluffy.
Pour over the cookie portion. Smooth out.
For the Top Layer:
Pipe whipped cream over top of the lemon layer.
Place in fridge for about 3 to 4 hours to let the liquid absorb into the cookies.
Remove from fridge and garnish with lemon zest.
Serve with a big old Meyer Lemon smile!
You can use regular lemons in this.
I had to take the photo before the liquid absorbed into the cookies. If you let this set up for about 2 to 4 hours the liquid will soften the cookies.
You could also use nilla wafers in this recipe for the base.
Serving: 1g
