I hate to disappoint you but there’s more Meyer Lemon goodness coming your way. There’s a Meyer Lemon Madness finale called Meyer Lemon Recipe Round-Up. I’ll share my Meyer Lemon recipes with you, as well as some by other bloggers. It’s quite a collection of Meyer Lemon recipes, and I look forward to sharing that with you. I also decided to do some Meyer Lemon Desserts for Sunday Supper this week as well. I mean I do still have boatloads of Meyer Lemons people. So there’s still more to come. I still need to share my Meyer Lemon Pasta, and my Meyer Lemon Bake. It’s Meyer Lemon mayhem folks.
After tomorrow’s post I’ll give a week reprieve though. No lemon recipes for a week. How’s that?
Instead I’ll be sharing Grilled Cheese Week with you. Since it’s the month of the classic sammie, I decided to whip up a few to share with you over the course of a week. There will be a classic, a not so classic, a spicy version and even a dessert version. So make sure you tune in next week for Grilled Cheese Week. It’s sure to be a blast.
I’ll also be sharing some subscriber news with you next week. I’ve put together a post explaining why some of you are getting duplicates and what you can do to fix it. I decided since I was doing that I would also make the shift to Feedblitz and share that info in the post as well. And just to really take it over the top I’ve done some fun graphics to help those who aren’t sure how to navigate the site learn to do it more effectively. Cuz I love you all and want to make your visits as pleasant as possible. It’s how I roll.

- 8 ladyfinger cookies broken into pieces
- 1/2 cup Meyer Lemon juice
- 1 tablespoon sugar
- 1/2 brick of cream cheese 4 oz, softened
- 4 cups of cool whip
- 1 teaspoon lemon extract use lemon juice if you don't have extract
- 2 cups cool whip
- Zest of 1 Meyer Lemon
Break cookies into pieces and lay in bottoms of mini trifle bowls.
In a small bowl combine the meyer lemon juice and sugar, mix until sugar dissolves. Pour over top of the cookies in the trifles bowls.
Mix the ingredients in a stand mixer, or hand mixer and bowl, until well combined and fluffy.
Pour over the cookie portion. Smooth out.
Pipe whipped cream over top of the lemon layer.
Place in fridge for about 3 to 4 hours to let the liquid absorb into the cookies.
Remove from fridge and garnish with lemon zest.
Serve with a big old Meyer Lemon smile!
This is so zesty and tangy it will knock your socks off. Plus it’s such a simple recipe. Any one can make this dessert. I love recipes like that. Quick and easy is my fave way to roll.
I’d like to thank all my readers for allowing me to drive you mad with Meyer Lemon Madness these past two weeks. It’s been a blast and I’ve enjoyed delving into the depths of Meyer Lemon Madness. For me it’s not over, I still have about 30 Meyer Lemons hanging around the house. Luckily I love Meyers so they will not go to waste at all. I’m thinking Meyer Lemon and Coconut Layer Cake. I’m thinking Meyer Lemon Marmalade. I’m thinking Meyer Lemon Vinaigrette for Salad. Okay is it sad that as Meyer Lemon Madness winds down I really don’t want it to end. I’m already thinking of a new theme, Meyer Lemon Mayhem folks. One woman’s struggle with her meyer lemon addiction. If this is wrong, I don’t want to be right.
