Apple, Orange and Fennel Salad

Ingredients

  • 1 tablespoon lemon juice
  • 1 tablespoon cider vinegar
  • 1 tablespoon canola oil
  • 1 teaspoon snipped fresh thyme
  • teaspoon salt
  • 1 medium apple cored and chopped
  • 1 medium orange peeled, seeded, sectioned and chopped
  • 1 small fennel bulb trimmed, cored and chopped
  • ¼ cup chopped pecans toasted

Instructions

  • In a medium bowl, whisk together lemon juice, vinegar, oil, the 1 teaspoon thyme, and salt.
  • Stir in apple, orange and fennel. Cover and chill for 1 to 4 hours.
  • Stir in pecans just before serving. If desired, garnish with additional snipped fresh thyme.
  • Serve!
