    Apple, Orange and Fennel Salad

    This apple orange fennel salad recipe is simple to make and uses fresh ingredients to make a healthy salad that will delight your taste buds.

    Hello there lovely readers of Cravings of a Lunatic!

    I’m Kelly from Eat Yourself Skinny. I was so glad when Kim asked me to guest post for her over the holidays.

    I absolutely adore her blog. I've been a follower for awhile now, her posts are just so fun to read!

    When I knew I’d be sharing a recipe around Christmas, I wanted to make something super festive but that was still somewhat healthy.

    I mean my blog is “Eat Yourself Skinny” after all, gingerbread cookies and peppermint bark wouldn’t exactly fall into that category.

    Umm lemme tell you…it is nearly impossible to find festive healthy recipes for the holidays.

    Trust me…I looked.

    So, instead of doing a low calorie cookie recipe or any dessert for that matter, I decided to go with one of my favorite holiday fruit salads that taste amazing with almost anything!

    Our family has this salad on the table every year during Christmas and the mixture of apple, orange and fennel tastes so delicious.

    You can even throw in some dried cranberries for a more festive look.  I didn’t have any on hand at the time so I just left the recipe as is.

    The addition of lemon is essential not only to keep the apples from browning, but it really brings all the flavors together in this dish.

    This is also heart healthy and diabetic friendly!  Hope you enjoy this as much as I did!

    Apple, Orange and Fennel Salad

    This simple salad recipe uses fresh ingredients to make a healthy salad that will delight your taste buds.

    Equipment

    • 1 Glass Mixing Bowl
    • 1 Glass Measuring Cup
    • 1 Measuring Spoons
    • 1 Wooden Spoon

    Ingredients

    • 1 tablespoon lemon juice
    • 1 tablespoon cider vinegar
    • 1 tablespoon canola oil
    • 1 teaspoon snipped fresh thyme
    • ⅛ teaspoon salt
    • 1 medium apple cored and chopped
    • 1 medium orange peeled, seeded, sectioned and chopped
    • 1 small fennel bulb trimmed, cored and chopped
    • ¼ cup chopped pecans toasted
    US Customary - Metric

    Instructions

    • In a medium bowl, whisk together lemon juice, vinegar, oil, the 1 teaspoon thyme, and salt.
    • Stir in apple, orange and fennel. Cover and chill for 1 to 4 hours.
    • Stir in pecans just before serving. If desired, garnish with additional snipped fresh thyme.
    • Serve!

      @Notes- I have to travel to the city for thyme myself. Hard to get in a small town. I lol'd when I read that comment about Kelly. If it will I am eating huge amounts of it myself. The girl is gorgeous. I hope the suggestions help. I've had insomnia since childhood. It's rough. I find the hot chocolate helpful. Or do all of them so you get into a routine. Draw a bath, then spray your sheets when you get out, then sit in bed with a hot chocolate with honey and off to snoozeland you go. I thought the caffeine would keep me up but something about the warm milk and honey just works.
