Spicy Chipotle Skillet Corn with Bacon

This dish is perfect for corn season. Take the kernels off the cob, and cook them in butter with bacon and onions. Then sprinkle a touch of chipotle spice over the top for a bit of heat. You can also use frozen corn, but fresh is SO much better!
  • 1/2 pound of bacon cut into small cubes
  • 1 cup diced red onion
  • 3 tablespoons butter
  • 4 cups of cooked corn taken off the cob
  • Salt and Pepper to taste
  • 1/2 teaspoon chipotle spice more or less to taste
  • Parsley if desired
  1. In a large skillet cook your bacon pieces and onions together. You want to cook over medium heat until the bacon browns and the onions start to caramelize. This should take about 10 to 15 minutes.
  2. Now add the butter and let it start to melt and sizzle a bit.
  3. Toss in your corn and stir it around, let everything come together.
  4. Add your salt, pepper and chipotle spice. Stir until incorporated evenly.
  5. Remove from heat and transfer to a large bowl.
  6. Toss parsley over top just before serving if desired.
  7. Serve with a big old "baconallthethings" smile!
