I dig any recipe with berries. I could literally eat berries for breakfast, lunch, and dinner. I’m an equal opportunity berry lover. I love them all. They make me seriously happy.
Fruit is my go-to in the morning. I’m not a morning person. Not even a little bit. In fact, I would prefer if morning started at noon every day. Unfortunately, that’s never going to happen.
Most days I’m up early. With kids and pets I need to get cracking fairly early. I’m not usually in the best mood so I avoid all contact with the outside world until I eat something.
Eating fruit every day can get boring. So I like to mix it up a bit. I love making breakfast parfaits and breakfast bowls. I also really dig granola cups. You can pile all kinds of fruit in them.
For this particular recipe I used raspberries but you could use any fruit you like. Strawberries, blackberries, kiwi, cantaloupe, mango, or bananas. The options are limitless.
The recipe for the granola cups is a quick and easy recipe. It’s only a few ingredients and very simple to make. This is for those days where you’re in a bit of a hurry.
Since this is a quick and easy recipe it comes with a few do’s and don’t’s. Be sure to use good quality ingredients. Gay Lea products always top the list for me.
Be sure you remove them from the pan before they completely cool. If you remove them too early they can fall apart. If you remove them too late they will stick to the pan.
The timing for removing them from the pan is crucial. You want them pliable enough to pop out but not so firm they stick to the pan. Test as they cool so you find the perfect timing.
These are best served the day you make them. Once you add the filling they are best served within an hour or two. Do not fill them and then try to serve them the next day. They’ll be soggy.
Once you fill them top with with berries. You can top them with one perfect raspberries or an assortment of berries macerated in orange juice. Whatever works for you.
There are no rules to breakfast in my world. Eat what you love. If you love fruit then find lots of ways to enjoy it. These granola cups are the perfect way to enjoy more fruit.
Aside from the butter to help hold the granola cups together this is a very healthy recipe. I used honey to help hold the cups together so be careful to watch carefully while they cook.
For the filling I used their Nordica Smooth Cottage Cheese in Vanilla Bean. It’s wicked smooth and creamy which is perfect for these granola cups. It’s absolutely delicious.
The vanilla bean flavour is just flipping amazing. It has flecks of vanilla bean in it and the taste is just out of this world. Honestly, I could slather this stuff on everything in life. I love it.
Since slathering it on everything in life is “socially unacceptable” I’ll settle for filling granola cups with it. Heaps and heaps of it. Inside every little cup. Heavenly, just heavenly.
Or you could call them little bites of happiness. Or healthy bites of sunshine and rainbows. I know, that’s a little over the top. Whatever you call them make a double batch.
Trust me, a double batch is always a good idea. They disappear quickly. Since they are so tiny you can eat more, right? Okay, that’s probably not true. Don’t listen to me.
I’m a sucker for tiny food. I don’t know why but it just makes me insanely happy. The tinier the better. I know it’s silly but I’ll readily admit I adore cute food. Don’t judge me.
Places to stalk Cravings of a Lunatic!
- 1 and ½ cups granola
- 2 tablespoons butter, melted
- 3 tablespoons honey
- 3 tablespoons coconut flakes
- 1 teaspoon vanilla
- 1 cup Nordica Smooth Vanilla Bean
- 1 cup raspberries
- Preheat oven to 350 degrees F.
- Spray a mini muffin tin with non-stick spray. Set aside.
- Pulse granola in a food processor until it resembles fine crumbs. Transfer to a medium size bowl. Add melted butter, honey, coconut flakes, and vanilla. Stir until well combined.
- Press the mixture into the mini muffin tins. Tamp down with the blunt end of a honey dripper or any kitchen tool making a well in the middle.
- Place in preheated oven and cook for about 6 to 8 minutes. You want the cups to turn a light golden colour. Remove from oven. Tamp down the middle again if needed. Allow to cool slightly. Remove use a butter knife or thin offset spatula. Place on a plate or cooling rack.
- Once cooled fill the cups with Nordica Smooth Vanilla Bean.
- Top with berries.
- Serve with a big old breakfast loving smile!
