These Mini Ice Cream Cone Cupcakes are made with mini ice cream cones that are baked with white cake batter in them, cooled then topped with white frosting, chocolate sundae sauce and sprinkles!
I have a thing for tiny desserts. I cannot help myself. The tinier the dessert the more I love it. These are misleading, the photo makes it look like they are normal size cones, but they are not. They are miniature ice cream cones, super teeny tiny. The cute factor is so over the top with these mini ice cream cone cupcakes.
My daughter and I went shopping last weekend. I was packing my cart full of baking supplies and candy when a memory of my childhood hit me fast and furious. It was like a blast from the past.
As we were walking through the candy aisle I saw a bag of marshmallow ice cream cone. Do you know the kind I'm talking about? My mom used to buy them during holidays for us kids to nosh on. I loved them SO much. There is something about them that instantly makes me nostalgic and happy. They remind me so much of my mom.
Any memories that remind me of my mom as welcome whenever they hit. I loved my mom to bits. She was one of those moms who always put her kids first. She went out of her way to make us kids happy, no matter what. Every week she would take one of use shopping with her and my grandmother. Being picked was everything.
We would go get groceries at various stores. My mom would search out deals, then we would drive around stocking up on those deals. Once the groceries were picked up we'd shop for clothes or toys, or anything else she had enough money left over to buy. There was always a treat or two in store for whoever got to go on that weekly trip.
She rotated through all of us kids each week. Your behaviour determined whether it was your week or not. So as grocery day neared you made sure you were "extra well behaved". I loved going shopping with my mom. It was the highlight of any week. Spending time with my mom without competing for her attention, it was awesome.
I remember always wanting sugary sweets when we shopped. If I saw marshmallow ice cream cones I would ask to buy a bag, or two. Mom would always sneak an extra bag in the cart so we would have some for the ride home. I would eat them in order of my favourite colours. We would talk and laugh, and make wonderful memories.
So, when I was shopping with my own daughter and saw those cute little cones I just knew I wanted to make something fun that reminded me of those sugary treats.
I filled the mini ice cream cones with cake mix, then topped them with frosting once they cooled. Then I decided to drizzle cooled hot fudge sauce over them, and toss some sprinkles over top.
Since I've been baking for Easter I decided to top them with jelly beans. Of course the jelly beans are my favourite colour, pink. That was a given.

Mini Ice Cream Cone Cupcakes
Ingredients
- 15.25 ounces cake mix
- 48 mini ice cream cones
- 15.6 ounces prepared frosting
- ½ cup cooled hot fudge sauce
- ¼ cup sprinkles
- 48 mini jelly beans
Instructions
- Preheat oven to 350 degrees F.
- Spray 2 mini muffin tins with non-stick spray. Place on a flat surface. Place a mini ice cream cone in each well.
- In a large bowl mix the cake mix. Scoop mixture into each mini ice cream cone until it's ½ full, otherwise the cupcakes will overflow out of the cones.
- Place very carefully in the oven so you don't tip the cones over. Cook for about 12 minutes, or until the tops are golden brown.
- Remove the mini muffin tins from the oven carefully and allow to cool completely.
- Scoop frosting into a piping bag with a fancy tip. Pipe frosting on top of each cupcake cone. I made mine look like soft serve ice cream cones, but you can pipe yours any way you like.
- Drizzle cooled hot fudge sauce over each cupcake. Toss some sprinkles over each cupcake. Top with a mini jelly bean, or any other candy.
- Place in fridge until you need them.
- Serve with a big old mini ice cream cone cupcake loving smile.

It's so much fun. If you do make some be sure to poke a hole in the bottom after you bake them. I noticed they got soft on the second day so I made them again and poked a hole in the bottom to release the steam. I need to make a note in the recipe.
They're just so cute. I think they'd be amazing at birthday parties. Or April Fools Day, make people think they're soft serve ice cream. Ha. I'm evil.
