Pistachio Cannoli Filling

pistachio cannoli

You all know how much I love pistachios. I mean it’s a love like no other. It surpasses my love of turtles even, and you all know how crazy I am about turtles. Pistachios are my go to snack. My favourite thing to munch on while watching a t.v. show or a movie. I love using them in baking. Any excuse to crack open some pistachios is a good day in my book.

When Aurora Importing sent me some cannoli shells I knew exactly what I was going in them. I knew it just had to be something pistachio. I knew I could just dunk the ends of the cannoli’s in chopped pistachios but that just wasn’t going to float my pistachio boat enough. I wanted more. So I decided to add flavour to the filling. I made two batches. One traditional batch using a wonderful recipe by Grace’s Sweet Life. She makes a wicked good cannoli filling using ricotta which I loved. Mini-me however is not a ricotta fan so I decided to make a batch using whipped cream instead. Then I made the leap to adding a hint of pistachio flavour to the whipped cream. Then I dunked the ends in chopped pistachio. In my world if a little pistachio is good then a lot of pistachio is even better. It’s a good motto to have. More pistachio makes a happier Lunatic.

Pistachio Cannoli Filling

Ingredients
  • 2 cups heavy (whipping) cream
  • 2 tablespoons pistachio pudding mix, unprepared
Garnish: 1 cup chopped pistachios
Instructions
  1. In a stand mixer (or use a bowl with a hand mixer) using the whisk attachment, beat the whipping cream until light and fluffy. I usually start slow until it thickens a little otherwise it will splash all over your kitchen.
  2. Once it's light and fluffy, add the dry pudding mix and mix until well combined.
  3. Scoop the filling into a piping bag with a large tip.
  4. Pipe the filling into your cannoli shells.
  5. Dip both ends of each cannoli in the chopped pistachios.
  6. Place in the fridge for about an hour.
  7. Serve with a big old pistachio smile!

These are the bomb. I know we all use that phrase way too much. In this case however it’s wickedly true. They are so good. I could eat them all up by myself. Not that I did or anything. I mean who would do that. *wipes pistachio cream off her face*

Now I know it’s not a traditional cannoli filling. If you want one of those I would head over to Grace’s Sweet Life and use her recipe like I did. It’s fantastic. She has a cookbook too, which I don’t have but it’s on my list of must have’s for 2013.

I’ve worked with Aurora Importing before and completely love their products. So when we talked about working together again I was thrilled. They know I am a pistachio fan so they also sent me a Fiasconaro Dolce Verde Pistachio Italian Christmas Cake. It’s similar to panettone but loaded with pistachios and comes with a pistachio cream you spread on top. It’s divine, a pistachio lovers dream come true. The lovely folks at Aurora Importing offered to give away 1 of these bad boys to one of my readers. So if you like pistachios, and who amongst us does not, we’d love for you to enter.

I am so drooling over this. Pistachios and I go back a long time, to the days when eating them left you with red fingers, lips and tongue.

    • Kim Bee says

I always like to hear that. I used to love the red ones. Always felt like you were misbehaving a little bit or something.

I wish you could too. Trust me I feel your pain. Most giveaways exclude us Canucks so I know how you feel. I lol’d at the last sentence. I have a funny feeling you’re not looking out a window to a yard full of snow right now so you are one lucky duck.

They are just the perfect little pastry. Something so adorable about cannoli. I pretty much did eat a lot of it with a spoon. It might have been a little sad how much I ate with a spoon.

They are a perfect combination. Glad to know I’m not the only one obsessed with pistachios. I’m having a lovely holiday season. Hope you are as well.

Pistachios have such great flavor! Lately we’ve been eating a ton of Spumoni ice cream, in part because we enjoy the pistachio in it. Great idea to use as a cannoli filling. Good stuff – thanks.

    • Kim Bee says

Love Spumoni, it’s divine. I am a pistachio, well, nut for lack of a better word. It’s just so good. I munch on pistachios almost daily. They are my guilty pleasure, yet somehow I feel absolutely no guilt. Thanks for visiting John.

  5. JayMo says

Looks good! Never heard of using pistachios as an ingredient in a recipe, I only eat them from the shell. Would love to try this cake.

    • Kim Bee says

Pistachios are amazing in all kinds of things. Cakes, baked goods, even rice. I find any excuse to use them. They’re also really good in biscotti.

A Canadian blog with lots of giveaways? Sold! (This is my first comment, so I don’t know whether your commenting font is always pistachio coloured – either way it made me grin..

    • Kim Bee says

Lol, thanks. So glad you like it here. There’s another one coming at you within a day. I laughed my head off over the pistachio coloured font, never occurred to me before.
