Pistachio Cannoli Filling

You all know how much I love pistachios. I mean it’s a love like no other. It surpasses my love of turtles even, and you all know how crazy I am about turtles. Pistachios are my go to snack. My favourite thing to munch on while watching a t.v. show or a movie. I love using them in baking. Any excuse to crack open some pistachios is a good day in my book.

When Aurora Importing sent me some cannoli shells I knew exactly what I was going in them. I knew it just had to be something pistachio. I knew I could just dunk the ends of the cannoli’s in chopped pistachios but that just wasn’t going to float my pistachio boat enough. I wanted more. So I decided to add flavour to the filling. I made two batches. One traditional batch using a wonderful recipe by Grace’s Sweet Life. She makes a wicked good cannoli filling using ricotta which I loved. Mini-me however is not a ricotta fan so I decided to make a batch using whipped cream instead. Then I made the leap to adding a hint of pistachio flavour to the whipped cream. Then I dunked the ends in chopped pistachio. In my world if a little pistachio is good then a lot of pistachio is even better. It’s a good motto to have. More pistachio makes a happier Lunatic.


Pistachio Cannoli Filling
  • 2 cups heavy (whipping) cream
  • 2 tablespoons pistachio pudding mix, unprepared
Garnish: 1 cup chopped pistachios
  1. In a stand mixer (or use a bowl with a hand mixer) using the whisk attachment, beat the whipping cream until light and fluffy. I usually start slow until it thickens a little otherwise it will splash all over your kitchen.
  2. Once it's light and fluffy, add the dry pudding mix and mix until well combined.
  3. Scoop the filling into a piping bag with a large tip.
  4. Pipe the filling into your cannoli shells.
  5. Dip both ends of each cannoli in the chopped pistachios.
  6. Place in the fridge for about an hour.
  7. Serve with a big old pistachio smile!

These are the bomb. I know we all use that phrase way too much. In this case however it’s wickedly true. They are so good. I could eat them all up by myself. Not that I did or anything. I mean who would do that. *wipes pistachio cream off her face*

Now I know it’s not a traditional cannoli filling. If you want one of those I would head over to Grace’s Sweet Life and use her recipe like I did. It’s fantastic. She has a cookbook too, which I don’t have but it’s on my list of must have’s for 2013.

    I am so drooling over this. Pistachios and I go back a long time, to the days when eating them left you with red fingers, lips and tongue.

    Wow! Those look wonderful, both the cannoli’s and cake. I may try the cannoli recipe as my husband loves pistachio…..hopefully we can share and not eat them all ourselves! 😀

      They are just the perfect little pastry. Something so adorable about cannoli. I pretty much did eat a lot of it with a spoon. It might have been a little sad how much I ate with a spoon.

    Pistachios have such great flavor! Lately we’ve been eating a ton of Spumoni ice cream, in part because we enjoy the pistachio in it. Great idea to use as a cannoli filling. Good stuff – thanks.

      Love Spumoni, it’s divine. I am a pistachio, well, nut for lack of a better word. It’s just so good. I munch on pistachios almost daily. They are my guilty pleasure, yet somehow I feel absolutely no guilt. Thanks for visiting John.

    Looks good! Never heard of using pistachios as an ingredient in a recipe, I only eat them from the shell. Would love to try this cake.

      Pistachios are amazing in all kinds of things. Cakes, baked goods, even rice. I find any excuse to use them. They’re also really good in biscotti.
