No Bake Meyer Lemon Cheesecake Shots {Two Ways} #SundaySupper

Meyer Lemon and Blueberry Cheesecake Shots

I just love no bake desserts.

They make me happy.

I think it’s the fact that you can fool people into thinking you spent all day making cute little desserts…

when you really spent all day watching things like The Real Housewives of Everywhere and Anywhere.

So apparently I’m admitting to getting a kick out of tricking folks.

Not sure what that says about me.

Not sure I really care.

I’ve got a full belly and I caught up on all The Real Housewives this week.

So life is good.

And when life is good you celebrate with not one, but two desserts.

It’s how us lunatics roll.

Meyer Lemon Cheesecake Shots

This week’s Sunday Supper theme is April Showers. Baby showers, bridal showers, we all need recipes that will feed a crowd for these types of events. So when I heard the theme for this week’s Sunday Supper I knew little shot glass desserts was the way to go. Feeds lots of folks and they have that cute factor. Function and cuteness, that’s a perfect combo.

Meyer Lemon and Blueberry Cheesecake Shots

Speaking of perfect combos, I have to say lemon and blueberry is wicked good. It goes together perfectly. The flavours compliment each other so well. If you’ve never tried this flavour combination you need to run into your kitchen immediately and make these. It will change your life. No lie!

Meyer Lemon Cheesecake Shots

Meyer Lemons can also change your life. Once you start using them you will never want to stop. Just check out my recipes over the past two weeks. Meyer Lemon Madness indeed. I got a tad carried away.

I hope you get carried away making these sweet desserts too. I can’t think of a better thing to get carried doing.

  • For the Blueberry Filling:

  • For the Topping:

  • For the Garnish:
  • Top with blueberries or lemon zest.
  • Pop the glasses in the fridge till you are ready to serve them.

Notes

Mix them up any way you like!

Standard bricks of cream cheese are 8 ounces. So if you half one it would be 4 ounces. Just a little FYI.

Lol Maureen, hurry woman, run! I swear my obsession has crossed the boundaries of good sense. I still have a huge bowl of them on my table. I suppose I should get cracking on some more recipes.

Thanks so much Jennifer. I’m so glad I’m not the only lemon/blueberry freak. Er, I didn’t mean to call you a freak. Good lord I’m tired today. Lol!

  3. 5

First, you are the master at piping. It is so perfectly done and looks beautiful.
Second, please pack up that wickedly cool spoon and send it to me please.
Third, great recipe and I agree lemons and blueberries go together wonderfully.

Awe you are too kind. I use a massive tip so I can pretend I know what I’m doing. I really don’t. I actually suck at it. Lol. Aren’t those spoons cool, my son bought them for me for Christmas. He paid a fortune for them too. I know that cuz he is in his 20′s and doesn’t wrap well, or remove stickers. Ha! They are my fave spoons, so freaking adorable. And thanks so much, love that combo.

  4. 7

Simply perfect, my friend. Who could resist these little shots of deliciousness? Now what did you do with the other gazillion Meyer lemons at chez Beaulieu?

  5. 9

So, I want a pointy spoon. And some of these. That is all.

  6. 11

Good Lord Woman, I haven’t had breakfast yet. There’s no chance that I want eggs or cereal now. I gotta get dressed and go to the store. Thanks for making these and sharing them Kim.

  7. 13

Lemon and blueberry really is a nice combo! And those shot glasses do indeed have the cuteness factor rolling. Fun dessert, great presentation. You are indeed the Meyer lemon Queen!

It really is. It just goes together perfectly. I have such a weakness for shot glasses. I picked up some really tall narrow ones last week. So cute. Thanks so much John. I’m having a Meyer Lemon Blast.

Thanks so much Diana. I had so much fun doing this post. Mini desserts are just wonderful to make and eat.

  10. 19

LOVE these!! Great idea for any given party!! You’ve made them look so scrumptious!

  11. 21

Oh Kim, you are the best with little yummies!! I love something these!! So cute!! Perfect for any shower!!

  12. 23

I love no bake desserts, and I love no bake cheesecake the most. These are SO gorgeous! Individual desserts are so cool. :)

  13. 25

I agree. Lemon and blueberries are like spaghetti and meatballs…they belong together. I love the idea of taking shots to a shower. Such a fun and elegant dessert.

      Kim Beaulieu says:

So true right. I thought it was a cute idea. Plus I’m just addicted to shot glasses. Not sure what that says about me.

  14. 27

I still have yet to find meyer lemons in my neck of the woods (I’ve haunted all the local groceries) and it’s killing me. Every time I see one of these recipes, I’m howling at the moon in frustration. This one is especially hard. You know how much I love cheesecake. And citrus. I want, I want, I want.

    • 28
      Kim Beaulieu says:

I wish I could send you some. I still have about 20 or so. I’m going to freeze some slices and curd this week while they’re still fresh. We lucked out cuz they are usually hard to find. Hubs finds them more readily where he works which is a couple hours away. Funny how geography plays into it. Just make it with regular lemons, works just as well. The meyers are just a touch sweeter.

  15. 29

These are absolutely gorgeous! I love no bake cheesecake, but in shot glasses = even better!

  16. 31

    Good lord, woman.
    These are adorable!

I love the way your mind works.

  17. 33

You are the queen of the dessert shot!! Love these glasses too. :)

    • 34
      Kim Beaulieu says:

Thanks lady. I am so addicted to cute little jars. It’s turning into sheer madness. And I’m totally okay with that. Lol!

  18. 35

Blueberry and lemon goes so well together- you’re right! I make this blueberry loaf with lemon frosting and about pee my pants in excitement when it’s ready. But, I would probably get the same excitement from your desserts and don’t have to wait for them to be done nearly as long!!

  19. 37

You make these desserts look so luscious. I really must Google cool whip and see what it is.

    • 38
      Kim Beaulieu says:

Thanks Suzanne. Cool Whip is just a pre-made whipping cream. I use it whenever I feel lazy. Or some days I just grab a spoon and eat it out of the tub for fun. It’s flipping fantastic. You likely can’t have it with your tummy issues though.

  20. 39

With all the meyer lemon recipes lately, i’m sure your kitchen has the wonderful lingering fragrance :)

Love this cheesecake shots — so beautiful!

It sure does Kiran. I swear it smells like spring here, which is good since it’s still cold here and we need a little sunshine in our lives.

Thanks so much my dear. I haven’t had time to check the FBF list yet. Are you attending this year? I hope so.

  21. 41

I would probably take a minimum of three! These sound and look fantastic – really, really delicious :)

  22. 43

Oh, these contain 3 of my favorite things: lemons, blueberries, and graham cracker crumbs. You are speaking my language!

  23. 45

Oh these are so cute. I don’t think I could choose between the two options so I would just have to make both.

  24. 47

I want these badly. I love all your mini treats!

  25. 49

Kim, everything is better in a shot glass, including this cheesecake! I can’t tell you how much I love these – I’d be so thrilled if I saw them at a party. I’d hover around those babies and growl at people who foolishly tried to grab one ;) Lemon and blueberry is one of my favourite flavour combinations. I’ve never tried meyer lemon before though – I really need to get on that!

    • 50
      Kim Beaulieu says:

Exactly my thinking. And I love your plan to growl at people. That makes me happy to know I’m not the only one who tries to steer people away from food I want all to myself.

Meyers are just a bit sweeter. I just love them, like a little addiction really.

  26. 51

sorry for my english, a recipe very rich and beautiful photos

    kisses

      Kim Beaulieu says:

Thanks so much Laurel. Your english is lovely. Never hesitate to leave a comment here. We’re a non-judgy sort of bunch here.

  27. 53

I totoally agree about the blueberry lemon combo! How fantastic is it!!!!! I really should source a meyer lemon tree. I have a mean recipe for bluberry cupcakes with creamy lemon frosting that you may like.

    Keep up the good work.

It’s the perfect combo for spring.I would love to put a tree in our yard. But I’m not sure it could take our Canuck winters.

  28. 55

Who could resist these little shots of perfection! WOW I love these and have to now go out and buy shot glasses!
