I have to say I was thrilled when I was asked to work on this project. Lunch Box Ideas, how cool is that.

Then a bit of terror seeped in. My kids are older, 20 and 25 to be exact, so it’s been quite some time since I’ve packed a lunch box for young kids.

I love the new movement of fun lunch boxes for kids, putting a healthy spin on them to encourage kids to eat a little healthier. I also love bento boxes, the level of talent out there when it comes to bento art is fantastic.

I decided to make mini food. Kids love mini food. Adults love mini food. Everyone loves mini food. So it just made sense to make mini food.

Mini Fruit Pizzas

Mini Fruit Pizzas

Simple to make fruit pizzas using pizza dough, cream cheese and fresh fruit. Perfect for popping in the kids' lunch boxes this fall!

Ingredients

  • 1 store bough or homemade pizza dough, preferably thin crust (use whole wheat if you can)
  • 1 package of cream cheese, softened, use Horizon Organic preferably
  • Various fruit, blueberries, blackberries, bananas, strawberries, raspberries, kiwi, or any other fruit your kids' dig
  • Honey or agave, optional

Instructions

  • Preheat oven to 400 degrees F.
  • Roll out your dough so it's thin enough for a thin crust pizza.
  • Use a biscuit cutter or cookie cutter to cut small rounds out of the dough. Place those on the cookie sheet, making sure to space them out a bit.
  • Place in the oven and bake for about 5 to 6 minutes, depending on size of your pieces.
  • Remove from oven and allow to cool completely.
  • Pop your cream cheese in a stand mixer and whisk until it's soft and fluffy so it's easier to spread. You can add a touch of honey or agave if you like, it's totally optional.
  • Spread the cream cheese on the pizza rounds evenly.
  • Slice up your fruit and place on top.
  • Serve with a big old fruit pizza loving smile!

Notes

You can mix these up any way you like. Use whatever kind of fruit your kids' prefer. You can make them healthier by using whole wheat pizza dough.

I am telling you there is nothing  more fun than playing with your food. I always found that letting my kids makes things like this where they get to choose the toppings goes a long way in helping them to make great food choices.

It really tends to help with picky eaters. Giving them a little freedom to pick and choose what they want on their own pizza is going to get them excited about food, and eating fruit. You can also do this with veggies. I included mini veggie pizza buttons in my lunchbox. Recipe to be posted later this week.
