Cedar Planked Salmon on a grill

Hey peeps, how is everyone doing today? I am beyond spectacular. Why? Well, because salmon makes me happy.

Salmon cooked on a grill on top of a cedar plank makes me ever happier. So, you could say I'm super spectacular today. It's like regular spectacular but I'm running around the house with a cape on today. Or a towel tied around my neck like a cape. Which is sort of the same thing, right.

Welcome to Week #2, Day 6 of Seafood Week. I am beyond thrilled my amazing blogging friends all agreed to do this for me. And by do this for me, I mean do all my work for me while I sit around watching Netflix all week.

I love my bloggy peeps so very much. They are my heart. Finding friends in life with a shared passion is a pretty amazing thing. I've met some of the coolest, sweetest people through blogging.

I feel so lucky to do what I love for a living. I feel even luckier I get to do it amongst people I adore so very much.

Today I welcome one of those very special friends to the blog. I adore Veronica so very much, she is such a sweetheart.

She formally blogged at My Catholic Kitchen. Veronica is just one of those down to earth kind of gals, so we get along swimmingly.

Welcome to Veronica of My Catholic Kitchen:

    Hi Yall!

I am so excited to be guest posting for Kim here at Cravings of a Lunatic!

I remember the first time I met Kim.

Cue the dream sequence harp sounding music.

    My Catholic Kitchen's view

It was a few years ago and we both made Foodbuzz top ten, it was my first time so I remember it as if it was yesterday.  She congratulated me and I thought what a wonderful crazy name for a blog. We have been blogger friends ever since.

I think I can speak for everyone when I say Kim has been instrumental in sharing her blogger knowledge with all of us. For that I am very grateful. So of course when she mentioned she wanted to take sometime off, I jumped at the chance to guest post to help her out.

    soaked cedar plank

Kim picked a seafood theme and living in Virginia Beach I have access to a lot of seafood. I have very fond childhood memories of crabbing and fishing along the Chesapeake Bay.

Planked cooking was first introduced to the colonists by the Native Americans here in Virginia. It is no wonder the colonists loved this way of cooking.

Grilling on natural wood imparts a slightly smoky flavor that cannot be compared to anything else. Perhaps the colonists love it so much because it naturally makes your grilled foods moist and delicious.

Thanks to Veronica for this tasty recipe!

Veronica, I have to tell you salmon cooked on a cedar plank is one of my favourite things in the entire world. My Dad loved salmon, and salmon fishing. So we grew up eating a lot of it and really appreciate good salmon. This is such a classic way to prepare it, and in my humble opinion one of the best ways to cook salmon. So thanks for sharing this with us. It's a real treat for me.

As per Seafood Week rules, here are some more embarrassing photos of me. I swear there are so many I could do this every day and never run out of photos to share.

My folks really got a kick out of taking photos of us to use for blackmail later in life. Then, we continued the bad photos into our adulthood. I blame my folks. They twisted us at a young age.

    Wait for it:

Kim with Grand-dad and Grandmother Mahaney

This is me with my grand-dad and grandmother at their anniversary party! I think I was 15 or 16.

     Wait for it:

So sweet right. Awe, isn't Kim just the nicest, cutest, most well-behaved young lady on the planet.

    Bam...there it is:

    Ken, Scott and Kim

What are the chances are 3 of us would close our eyes at the same time? Pretty good if we were all drunk. We had the adults fooled until we all insisted on getting spaghetti at 3 am. Hungry drunks!

Salmon is one of my favorites... and I have never done the cedar plank route. I need to give that a try. 🙂 Love the drunk eyes closed photo... LOL! 🙂
