These Coconut Granola Bars are simple to make and scrumptious to nosh on. They are perfect for a quick breakfast on the go or a healthy snack.

Honestly, nothing beats homemade granola bars and these coconut granola bars are exceptional. Not only do they smell amazing as they bake in the oven, but the flavour is out of this world.
I don't know about you, but this girl loves her snack recipes! Whether it's delicious popcorn, homemade cookies, brownies and bar recipes, or fun parfaits, I just love a great snack midday or late at night.
There are so many options for snacking. You can have something healthy or indulgent. Store bought is quick and easy but homemade snacks are always the best.
If you've never made granola bars from scratch you are missing out. They are incredibly easy to make and are actually quite quick to make.
Another fun perk of making homemade granola bars is that you can add anything additions you love to them. The variations are endless, quite frankly.
You can use dried fruit and nuts, or you can go crazy with chocolate, peanut butter and any nut butters you love. There is no limit to the combinations you can mix up.
For your first batch, I highly recommend making these coconut granola bars. You can thank me later!

Ingredient Notes:
- Sugar - This recipe calls for packed brown sugar. You can use light or dark brown sugar for this recipe.
- Peanut Butter - Any brand of peanut butter will do for these granola bars. Adding peanut butter to bars adds a little extra flavour and protein.
- Rice Syrup - These bars use brown rice syrup. You can easily swap that for honey, maple syrup or agave.
- Egg - One large egg is used for this recipe. You can use the egg cold out of the fridge or room temperature.
- Extract - Vanilla extract is used for this granola bar recipe. You can substitute almond extract or coconut extract if you prefer.
- Oats - I used old fashioned oats for these bars. Quick oats can be used if you don't have old fashioned oats.
- Chocolate Chips - Personally, I love milk chocolate chips but for this particular recipe I used semi-sweet chocolate chips. You could also use dark chocolate chips or even white chocolate chips.
- Coconut Flakes - For this recipe, I used unsweetened shredded coconut flakes. Use whatever kind you have on hand.
How to Make Coconut Granola Bars:
- Begin by spraying a 10 x 15 inch baking pan with non-stick spray. Set aside.
- Then, stir in the first five ingredients in a large mixing bowl until well combined.
- Add the remaining ingredients to the bowl and mix until combined. The mixture should look like stiff cookie dough.
- Next, transfer the mixture to the baking pan. Spread out evenly and press down lightly into the pan. Set aside for 3o minutes prior to baking.
- Preheat oven to 350 degrees F.
- Place the pan in the preheated oven and bake for about 20 to 25 minutes, or until the top is golden brown.
- Remove the pan from the oven and cool completely.
- Cut into bars.
- Serve or store for later.

Coconut Granola Bars
Ingredients
- ½ cup brown sugar packed
- 1 cup peanut butter
- ¾ cup rice syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 3 cups old-fashioned oats uncooked
- 1 cup semisweet chocolate chips
- 1 cup coconut flakes unsweetened
Instructions
- Spray a 10 x 15" baking dish with non-stick spray.
- Stir the first five ingredients together in a large mixing bowl until combined.
- Now add the remaining ingredients, stirring with a wooden spoon until well combined. The mixture should resemble stiff cookie dough.
- Now transfer the mixture to baking dish. Use the back of a spoon to spread it evenly. Let the dough rest for 30 minutes on the counter.
- Preheat the oven to 350° F.
- Place baking dish in oven, and bake for 25-30 minutes. The top should be golden brown.
- Cool completely. Then slice into bars.
- Store in an airtight container. Or shove them in your face while still hot like I did.
- Serve.
