Apple Pie (10 inch pie):
1 cup sugar
½ cup light brown sugar
â…“ cup flour
1 ½ teaspoon nutmeg (this can be adjusted down to taste)
2 teaspoons cinnamon (this can be adjusted down to taste)
Pinch of salt
4 tablespoons butter
8ish cups apples, about 7-8 medium sized (I find using more than one kind of apple makes a nicer pie. Sometimes I even use a granny smith in with it for some kick. Generally I like macs, empires or cortland(if available).
Directions:
Mix both sugars, flour, nutmeg, cinnamon and salt in a bowl. Set aside.
Peel apples and slice into pieces. Pour apples into the dry ingredients and mix well until apples are coated nicely.
Pour into pie crust.
Dot with butter, break it into pieces and spread it around.
Cover with top crust and make slits to let heat escape.
Bake at 425 degrees for about 40-45 minutes.
If needed put tinfoil around the edges to keep from excessive browning.
Remove from oven.
Deb`s Sweet Pastry:
2 ¼  cups of all purpose flour
â…” cup icing (powdered) sugar
½ teaspoon salt
9 oz butter (about 9ish tablespoons), cut up into small pieces
2 tablespoons cold water
1 teaspoon vanilla
Mix flour, sugar, and salt together in a bowl or food processor.
Add butter, and mix (or use pulse on food processor) until the dough resembles find crumbs.
Pour in the water and vanilla and mix until it all comes together to form a ball.
Roll out to desired pie shell.
