This easy beef stir fry recipe uses leftover beef roast as the main ingredient. Fill it up with whatever veggies you have on hand, then top it over rice or noodles for a fabulous dinner. I love mine over jasmine or basmati rice, my daughter loves hers over noodles.
Doesn't this look amazing?
I hate to toot my own horn...
I love stir fries. They make me happy. Everyone in my household is a fan of them so that's a win-win situation here. Even Miss Picky Mini-Me eats stir fry. So I make them as often as possible.
What I love about them is their versatility. You can use just about anything in them. You can whip them up from scratch. Or you can use leftover roast, leftover steak, leftover chicken, leftover pork or even do a veggie stir fry. The possibilities are endless.
If you're digging this dish you need to hop over to Try Anything Once for the recipe. But before you go let me tell you a little about my friend Dionne.
Dionne is an amazing person, and a dear friend of mine. She is holding a Hunger Strike this week to raise awareness for No More Hungry Nights. It's her way of shedding some light on food insecurities. For the Hunger Strike Dionne is only eating what kids eat for breakfast and lunch on the school lunch program. I commend her for doing this. I'm sure it's not an easy thing to do. Dionne is so passionate about what she believes in. Show your support by cheering her on and learning more about her cause, No More Hungry Nights.
I encourage everyone to learn more by heading over to Dionne's site. While you're there check out my recipe for this stir fry. Poke about, cheer her on and get involved. You can donate money, or goods. You can also buy merchandise to help support the cause. Whether you can only help a little, or whether you can help a lot, every little bit helps.
My guest post touches more on the subject of being hungry. I share my own personal story with my family's struggles over the years. There have been times where we've really hit rock bottom and needed help ourselves. Not easy to talk about but so important to share with people. I think the greatest gift we can give people going through hard times is letting them know they are not alone.
A huge thanks to Dionne for allowing me the pleasure of guest posting for her today. It's been an absolute pleasure.
