This easy beef stir fry recipe uses leftover beef roast as the main ingredient. Fill it up with whatever veggies you have on hand, then top it over rice or noodles for a fabulous dinner. I love mine over jasmine or basmati rice, my daughter loves hers over noodles.

I love stir fries. They make me happy. Everyone in my household is a fan of them so that's a win-win situation here. Even Miss Picky Mini-Me eats stir fry. So I make them as often as possible.
What I love about them is their versatility. You can use just about anything in them. You can whip them up from scratch. Or you can use leftover roast, leftover steak, leftover chicken, leftover pork or even do a veggie stir fry. The possibilities are endless.

I love stir fries. I haven't made one forever. And pot roast. We have never used one of those as the meat. I think my husband will do a little jig if I tell him about this recipe. Of course I will. One I can enjoy the dish and two because I want to see him dance!

You gotta make one. We probably do at least one a week. And roasts we always have some left cuz my son moved out. So it's quick to make since the meat is already cooked. Just brown and bam, you're good to go. Easy peasy for busy weeknights.

Yeppers, we never waste food here. I buy really good quality beef. I tend to buy tenderloin and cut them up myself so we use every last piece of it.
It's good stuff. We eat stir fry all the time.
