    Cold weather= taco night for the Beaulieu Bunch

    Well I know all us locals were complaining about the weather but this is crazy. It's so cold here today. I'm all for a cool day now and then but the timing of this one was kind of ironic. We finally take the leap to buy a new barbecue and the next day it's too cold to want to use it. I will refrain from wishing for the heat again though. I know it's coming back and will be hitting us hard soon enough. So I will try and enjoy the brief break in the weather. I figured since it was cool I could turn the oven on. That's a rarity here in the summer. So I ran to the store and picked up what I needed to make tacos. Nothing like an impromptu taco night. Forgot to get salsa but we survived.  Taco night is always a joy around here. Well worth the effort. So enjoy and make the time to do your own taco night.

    Steak Soft Taco:

    1 pound of steak, I used a fast fry since I did this last minute. Normally I'd do a nicer cut and marinate.
    Lettuce, sliced
    Medium cheddar cheese, grated
    Soft taco shells, we use the medium size
    2- 3 tablespoons of Tamari Sauce, I like "memories of Kobe" which is a thick tamari sauce
    Garlic powder to taste
    Chili powder to taste
    Salt to taste, I like Himalayan
    Pepper to taste
    Olive oil (for keeping things moist)
    Optional- green pepper
    red pepper
    orange pepper
    onion (I like the sweet)
    tomato
    sour cream
    salsa

    Directions:

    Cut up all your veggies and set aside.

    Grate your cheese and set aside.

    Cut up steak in to thin strips. Trim off any fat.

    In a saute or frying pan use a little olive oil and cook steak over medium heat. Once meat is almost thoroughly cooked add spices and tamari sauce. Continue to cook until tamari absorbs and steak browns nicely.

    Remove and heat up the tortillas in a frying pan or in the microwave.

    Let everyone go crazy and load them up the way they like.

    Enjoy!

    Hard Beef Tacos:

    2 pounds of hamburger
    Taco seasoning (I like old el paso, I know it's shocking I don't do my own right!)
    Lettuce, sliced
    Medium cheddar cheese, grated
    Hard taco shells
    Optional: green pepper
    red pepper
    orange pepper
    onion
    tomato
    salsa
    sour cream

    Directions:

    Cook hamburger over medium heat until juices are clear. Do no over brown.

    While hamburger is cooking take that time to cut up all your veggies and grate your cheese. Set aside.

    Once hamburger is ready add one to two packets of taco seasoning depending how spicy you like it. Add 1 cup of water and bring to a boil. Once it has boiled for about 4-5 minutes lower the heat to let it simmer.

    Simmer for about 15-20 minutes, stirring occasionally.

    Remove from heat and set aside.

    Place shells in oven at about 350 degrees for 3-5 minutes.

    Place everything out for everyone to load up themselves.

    Enjoy!

    If you have somewhere to lay it all out it makes it easier for everyone to do their own thing. Everyone does theirs different here. Me and Kiana tend to be pretty tame and plain, C and Bray tend to throw on everything but the kitchen sink. This is a great meal when you have company or when the kids have friends over. Young kids love making a mess with their own plates. Have a ball and enjoy! xx

      I wish it was cool! It's hot as blazes down here in Georgia! My son loves Tacos - he had rather hoped that is he came up with something catchy like "Taco Teusday" that we could make it a weekly thing...These sond delicious.

      Thanks so much. I love taco night. I'm with your son, it should be a weekly routine. After a missed trip to taco bell my craving took over and I just had to make my own.

      Conspiracy theories abound about our weather. I think it's because we bought a new bbq. Mother nature's cruel joke. lol
