    Ice Cream Sundays- S'mores Ice Cream

    Hi folks. This week has been nuts. Lots going on. I feel like it's a good thing summer has come to an end so I can get organized and get my house back under control. I end up spending so much time with the kiddos that everything else falls by the wayside. So after 2 months of them being home I need a break so I can get stuff done. They need to return to school if for no other reason than I need to clean the house and do some paperwork. I love them being home way too much. 

    So this week I made s'mores ice cream. For some reason I hadn't tried that one yet. So had to do it before the cold weather blows in. I made a few adjustments to the recipe I found. If I can give you a tip for this ice cream it's this- do not put the freaking fluff in the fridge and try to scoop it easily into the ice cream maker. Holy shnikeys people, what a freaking mess. Gobs of sticky icky marshmallow fluff everywhere. I swear even the kitten managed to get some on him. He really needs to stop sitting at my feet while I cook. There may or may not be fluff in my hair as well. I am quite certain it is on my clothes. For sure it's on my laptop. Now that I think of it there may not actually be any in the ice cream. It's stuck everywhere else but goodness knows if any actually managed to make it into the ice cream maker. Another tip- I used these really cool cookies. They are like a graham cracker but they have chocolate already on them.  Mini-me's friends use them for actual s'mores. They save a step. Chocolate and cookie in one. You cannot go wrong with that. Here's what the box looks like so you can scour your stores for them.

    Yup, they are super yummy. Not quite a graham cracker but man oh man they sure are good. If you are worried the taste of graham is not prevalent enough then you can just toss in some graham crumbs. I always have some on hand for making cheesecakes and whatnot.

    So are you tapping your fingers impatiently yet? Just give us the dang recipe you lunatic. Geez, there's no need to be rude. You should go have a bowl of ice cream and calm yourself down a bit. Here try this one.

    Yah you know you want it.

    Yah you know you're jealous.

    Yah I know you want the freaking recipe.

    S'mores Ice Cream:


    *Recipe adapted from Cuisinart*

    Ingredients:

    ½ cup cocoa
    â…“ cup sugar
    ¼ cup dark brown sugar
    Pinch of vanilla salt (normal is fine)
    â…” cup whole milk
    1 ½ cups heavy cream
    1 teaspoon vanilla
    ¾ cup marshmallow cream aka fluff
    12 chocolate covered cookies (1 cup), crushed
    1 cup milk chocolate chips

    Directions:

    In your mixer combine cocoa, sugars, and salt.

    Add the whole milk and whisk until sugars are dissolved.

    Stir in heavy cream and vanilla.

    Cover the bowl and set in fridge for 1 to 2 hours.

    Remove from fridge and pour mixture into your ice cream maker freezer bowl.

    Turn on and mix for about 10-15 minutes.

    Now add your fluff, chocolate chips and cookies and mix for another 5 minutes.

    You can serve immediately or stick it in the freezer until you are ready to serve. Just remember to take it of the freezer for about 10 minutes before serving if freezing.

    Looks yummilicous right!

    So hopefully the weather stays nice for a few more weeks. I have some really cool ideas for the last few posts. So I really hope you put up with these posts for a bit longer. I love doing this weekly post. Are you sick of me using the word post?  It takes some time to put together this type of post but it is so worth it. Hope you folks enjoy these posts as much as I do. Ha, did you really think I would stop.

    I really hope you all are enjoying your holiday weekend. We have had some fun. As always. Few more days and mini-me starts university. Few more days after that and B starts university to finish his last year of his masters. So one more week and I HAVE THE HOUSE TO MYSELF.  Whew, sorry got a little excited there. I think I've had about an hour and a half to myself all summer. So you figure about a minute and a half a day if you average that out. Lol. Yikes, no wonder I am starting to get cranky. No one likes a little miss cranky pants. But seriously, I just want some peace and quiet. Not a lot of peace and quiet. Just a little. A wee bit. A teeny tiny amount. Like maybe 2 minutes a day. Seems reasonable.

      I'll eat any chocolate ice cream! You can keep the rest but give me the chocolate! This one looks awesome. I love how you saved a step and used those cookies. I'll have to look for something similar here in the states. I'm looking forward to slow cooker Sundays!

      If all these pictures are not inspiring, I do not know what is. When is the ice cream shop open? I need to figure out which I want to taste first..Great post. I will try the smore's ice cream first!

      Kim, this s'mores ice cream looks AMAZING!! I'm coming over to get some right now! lol As much as I have loved ice cream sundays, I am really looking forward to slow cooker sundays as I am in need of more slow cooker recipes in my arsenal!

      @Dee- Thanks lady. I think they probably have something similar or better in the states. Canadian shopping blows. I have to get my passport and start shopping in the states. You guys have better brands. I love me some chocolate too. The chocolate fudge brownie pistachio was my all time fave.
